    Larry, turns out, you're exactly right. Much shorter than I'd expected to cook it, but it came out better than I would have guessed. It's in foil, and ready to be devoured. Thanks.

    Uh-oh...what now?

    I started a midnight cook of a brisket last night, and made the mistake of ... falling asleep. Started awake five hours later (seven hours after putting it in) and the grill temp. is 300, and the probe tells me the internal temp of the meat is 200. Do I take it off? Is it ruined? Help!
