    My biggest fear I would have for you is if you dropped $300 and spent the next 20 + years wishing you would of just gotten the 22 inch one. If you think you would want or use the extra space get the 22" one and don't look back. Just because it DOES hold more charcoal, for shorter cooking times...

    I have done a lot of boston butts etc, I highly doubt it will take 16 hours. More like 9-12 hour range I would thing. Obviously if you can run your smoker in the 240-250 range it will take less than if you are in the 225-230 zone. A few things: 1) your smoker might have some temp swings...

    The cookers would run just about the same but the butts may vary anyways due to size or just because they will. Having said that if they will fit (which they should) I would us the 2 18.5. Sure you can't get them all (all 8) onto the 22.5?

    If you have time you could always do 4-5 racks, put them in fridge, do the next batch the day before etc. then warm them in oven or better yet grill that day. you may not have the time though...

    I don't have a 18.5 and 22.5, I just have the 22.5. So maybe not the best one to answer but I personally have not had an issue with running "too hot". I can control temps I assume just as easily as I would be able to on the 18.5. I have no issues keeping it in the 225 - 240 range if I want...

    I will say if the 18" meets your needs 95% of the time (your estimate) AND this was a gift from your wife, just stick with it. I have the 22" but honestly have rarely needed the extra space

    A couple of things: 1) The temp probe on the dome of the wsm is known to not be that accurate. It will give you a ball park but don't rely on it for accurate readings. The $ you saved on the $99 deal you may want to invest in a nice Maverick thermometer like this one if you want more accurate...

    Couldn't pass up a deal, No Brainer 14.5" purchase at Wal-Mart

    there is absolutely zero, nill, zilch way you could pass up a $50 WSM. That is an absolute steal. I have the 22.5 and love it, but also have a family of 5 that I sometimes just want one chicken or some wings to smoke. If I saw this for $50 it would be in the cart so fast.
