Will more holes at the bottom of the Grillgrate help darken the meat? I too notice the pale color but the meat is very juicy!

Hello everyone, I am a spanking new member. I purchased a Smokey Joe Silver in September and found missing porcelain enamel coating at the handle area. Weber's Customer Service in Canada will send me a replacement, but I am curious if other Smokey Joe owners have experienced the same issue...
