Ribs over Butts - Anyone done it?

I was thinking about laying down some parchment paper under the ribs to collect drippings. Yes, I'll be foiling and resting in a cooler.

Ribs over Butts - Anyone done it?

Merry Christmas and Happy Holidays! I was planning on doing a butt cook and then a rib cook for Christmas Eve. Had somethings come-up and it looks like I’m going to have to combine my cooks. I’m thinking I’ll add my ribs over my butts with about 5 hours left in my butt cook. Has anyone done...

Brisket Point - High Heat or Low and Slow

She's only 6.5 lbs so even low and slow won't be a long cook. Will be a pool day so we'll be hanging around outside and won't mind an all day long cook. Think I'm going to go 250. Not doing burnt ends, just serving as is. I eat a keto diet (high fat) so point is perfect! I'll post my results.

Brisket Point - High Heat or Low and Slow

My go to method for packers is high heat, done it for years, with great success. Smoking my first point only and this weekend and not sure if I should go low and slow or high heat on her. Anyone do points only have thoughts on this? Thanks in advance!

    Picnic: Skin off or on?

@Chad - What are you looking to do with it, pulled pork? If so I'd remove so you can get some great bark where the skin would be laying. I use picnics for Pernil and I leave the skin on for that.

    Keto Friendly Rubs

@Tim - Thanks! To be honest, losing the weight eliminating carbs has been super easy. I'm embarrassed to say I haven't exercised once, just eaten a lot of fat and under 20 total carbs a day and the weight just fell off. I've got another 10-15 to lose and I'm thinking I'm going to have to...

    Keto Friendly Rubs

@dustin - Agree, however the family prefers a sweeter rub. I suppose I could use some powder stevia vs. sugar in my standard rubs.

    Keto Friendly Rubs

Started doing keto diet end of last year, down 50+ lbs, haven't smoked anything in that time not due to diet, just too busy. Going to smoke this weekend and I was curious if anyone on here has done any ketogenic friendly rubs? Thanks in advance!

Calling Skin-on Chicken Thigh Experts, Need Some Help

Haven't done any smoke but may have to give that a shot to mix things-up. I use Pappy's (full sodium) as I've found on keto I need to update my intake. I shoot for 70% Fat, 20% Protein, and 5% Carbs, and I keep my TOTAL carbs under 20g. I'm pretty strict on my carbs right now and use total vs...

Calling Skin-on Chicken Thigh Experts, Need Some Help

Got it figured out - Run left and right burners at 75% open, pre-heat 10 minutes, place two rows of thighs down the center of the grill split by middle burner thats in the off position. I turn at 10, 10, 5, 5 minutes, pull and rest for 10 minutes and we're golden! Thanks for all the input!

Calling Skin-on Chicken Thigh Experts, Need Some Help

Interesting, so does he actually stand there for the entire 35 minutes? Direct or in-direct? Med, high heat? I realize you may not know the answers to these questions.

Calling Skin-on Chicken Thigh Experts, Need Some Help

Hoping to get some help on not burning my darn chicken thighs. I now eat Keto (high fat/low carb diet) and I've been leaving the skin on my chicken thighs vs. removing the skin like I have for years. Problem is I burn the darn things every dang time from the flair-ups. I'm cooking on a 2 year...

Any Electricians in the House? 4 wire vs. 3 wire light switch confusion

Great news, electrician knocked everything out with the parts I had, turns out the 4th wire was buried in the walls. Disabled 2nd switch in the one multi switch and they all work great! Based on what he found when he saw how the handyman rewired one of the switches I had him check an outlet, GFI...

Any Electricians in the House? 4 wire vs. 3 wire light switch confusion

@Chris - Thanks Chris, I think I might just order a couple of those just in-case. Backlit is only powered when you're programming or turning on and off. Other than looking cool it really doesn't server a purpose if you have good lighting in the area. @Tim - The electrician said he'd "bypass"...

Any Electricians in the House? 4 wire vs. 3 wire light switch confusion

Tim - no, different guy lol, great memory. I have zero luck man, zero. Actually I found a really good plumber; retired plumber, did it for 40 years, he does small jobs just to keep busy and he says he likes to help people. Guy is awesome! Brandon - Thanks for your note.
