Butt over beans - food safety question

I have two butts on the WSM on the top rack and decided to try one of the bean recipies from the forum. I had the butts on about 2 hours, then I put the beans on the bottom rack underneath the butts to catch the flavorful drippings. I took the beans off after 2 hours, the butts will be on all...

    Freezing Cole Slaw

I made up about 3 pounds of cole slaw from a recipie I found in Backyard BBQ. It has cabbage, sour cream, mayonnaise, sugar, mustard and vinegar. There is no way I'm going to even eat one pound today. Can this be frozen? I'm not sure you can freeze mayo and sour cream, but who knows? Thanks!

5 lb. Brisket took 10.5 hours - is this right?

This is a total "newbie" question but if I pick up a couple of butts/picnics on Wednesday, will they still be good to cook overnight Saturday? To be honest, I don't remember seeing any dates on the last one.

Can't find pork butt, only picnic - need advice

I just recently got my WSM. I did a rib and picnic bbq for a first try and the ribs came out good (3-2-1) but the picnic was lousy - way too smoky, dry, and it didn't pull apart easily even though I smoked it for almost 2 hours per lb. @ lid temps around 240 degrees. I used the BRITU rub and...
