    My Memorial Day Weekend Smoke

I smoked two briskets this weekend (12 lb. & 9 lb.) over hickory. One was rubbed in Montreal Steak seasoning and the other was rubbed with a red, spicy, southwestern-style rub I hooked up at the house. Overall, it was a great weekend. Got some fluke fishing in and spent the weekend with...

    July 4th Smoke - What's ya cookin'?

I'll actually be cooking chicken and ribs on July 3rd, as I received an invite to a big 4th of July party on Saturday. I'd love to do another brisket (just did one this weekend) but I haven't had ribs in almost 6 months...so I think it's time!!!

My first stab at Stuffed Pork Tenderloin + a non-stuffed Tenderloin!

Here they are. Man, the stuffed tenderloin was perfect! Both tenderloins were very moist and tasty. The jerk was awesome. That was the first time I've ever used jerk on pork. Definitely going to do that again! The sweetness of the stuffing with the pork was addicting...I want more. I...

    After donating to the Veterans...

I picked up two 4.5lb briskets. Threw some beers into the fridge for tomorrow's BBQ. Corona, New Castle, Rogue, Mike's Hard (for the women), Brooklyn Brewery, Shock Top, Hefeweizen, IPA...and more. The briskets are in ziplocs here and each one has their own unique rub. I'll be waking up at...

    Woof, Woof?

Yep. Look at that bark. Yesterday's cook. After 17hrs = Exhausted. Here's a timeline... 5am: Start the coals in the chimney. Fill the WSM. 5:45am: 19.5lbs of meat goes on (both racks). Four hours in: Ten hours in: Fifteen hours in: Seventeen...

Cooking with both racks for the first time

I will be smoking three to four 6-7lb butts this weekend. I have only used both racks on my WSM to cook wings - so that doesn't count. When I make pulled pork, I cook a 6-7lb butt for roughly 14 hours. What I'd like to know is, how much longer than 2hrs/lb should three or four of these...

    Generous people

Got the hook-up locally and for years and years to come...as long as I buy some fruit and bring them some pulled pork (the owner's wife requested!). I've read about being able to use fresh apple wood for smokes but personally, I have not used fresh wood for any of my smokes in the past. I...

    Looking for some help...

I remember reading a thread here where someone had asked about some very nice high-heat gloves. The thread had someone's daughter in it helping out when the BBQ was all done!! I have an Orca glove but it's a PITA to use because I cannot move my fingers freely. Thumb is on the bottom and all...

    This weekend's cook

I have an 8lb chicken ready at home and it's urgently awaiting my arrival. I am going to brine it this evening and smoke it tomorrow for some company that is coming over to watch the UConn game. I'm actually traveling right now and picked-up this AWESOME-tasting beer from a brewery in Des...

My first smoke in the new year!!!

I haven't smoked since Thanksgiving when I did about 100 wingettes on the WSM. I just prepped my 4lb brisket with some rub, Worcestershire sauce, apple cider vinegar, and rum. It's going on Saturday morning! I have some hickory logs and some oak logs as well. I have some mesquite, cherry...

    Where to eat BBQ!?

I figured I'd make a thread for this as I travel frequently and love BBQ. I've been to some really good places for BBQ in Texas...One of my favorites being Mesquite BBQ in Mesquite, TX. I also went to a place in San Antonio (outskirts, actually) which was awesome. I had smoked turkey, ribs...

    Spur-of-the-moment WINGS

Decided to use the smoker being that it was a little warmer today than yesterday (34F versus 26F with lots of wind). Here they go: I made my own rub (chile powder, black pepper, garlic powder, thyme, paprika, all-spice, with lemon juice, soy sauce, and two scotch bonnets). All...

Gonna smoke my first Shoulder (butt-end)

As the title says. I picked one up this morning - a five-pounder for my gf and I (and my two pitbulls). I plan on smoking it on Saturday and I practically want to smoke this thing when I get home from work tonight! Damn smoker! Well, I'm debating about whether or not to use a vinegar-based...
