    6 Butts Possible on 22.5

I have 6 butts to cook this weekend for my nephews graduation party. I am thinking I should be OK but now as the date draws near I want to make sure I will be able to get six on the 22.5" WSM. I an thinking 3 per rack should be pretty easy of do I need to mod the WSM to hold a third rack? I like...

IQ 110 First Use and Initial Thoughts

Well my wonderful wife and kids got me a Pitmaster IQ110 for Christmas and I pressed it into service that day for the Ham and Turkey cook I had planned for supper. I must admit I picked a tough day to test my new toy. For one thing I was shooting for temp of 325 which I have been able to achieve...

Foiling to Hold until its time to eat

Ok guys I have a question. I am going to try my first full packer this weekend. I have cooked a flat one other time and it came out dry so I am hoping for some better results this time around. The question I have is foiling to hold the brisket after the cook but this could also apply to any...

    Maverick Probe Mod

Question for everyone out there. I installed the mod for the Maverick probes this past weekend and tried it out on Saturday. The mod worked great but I have a question. Would the mod allow enough air flow to keep the coal from snuffing out. In the past my WSM would shut down pretty quick after...

    Stable Temps

One of the reasons I purchased a WSM was for the supposed temp stability. I have now cooked on my new one 3 times and I am constantly chasing the temps. They will start to trend down so I will go out and make an adjustment. The temp will recover and I think it is going to stabilize but it will...

    Lamp Mod Question

I know several people have installed this mod to run the probe wires into the cooking chamber but I never liked to idea of drilling a new hole into the middle section. I have seem other mods (Guru Guys)have one that replaces one of the grill brackets bolts. The problem with that is the Maverick...

Cutting Pork Butt Cooking Time in Half

I was wonder if anyone has done this or if its just a bad idea. Using the rule of thumb of cooking times 1 lb. = 1.5 hours of cooking. So for a 10 lb. pork butt your looking at 15 hours of cooking time. What if I cut the 10 lb. pork butt into 2 5 lb pork but before cooking? Is my new cook time...

My 22.5" WSM will be here on Thursday.

So the obvious first question is what to cook this weekend. I am thinking a butt. I have cooked a couple on my OTS and have had mixed success. I might even throw on some spares just because I can now that I have the space. Here is my first of many questions. Is there a huge temperature...
