    $6.99 ribeyes!

Found a family pack of CAB ribeyes at a local grocery for $6.99/lb. This is about half what they would cost @ Kroger or Publix, and these Choice Angus ribeyes are hand cut and better than either of those stores. Since the weather was really nice today, I decided to grill them up for dinner...

Some say I'm certifiable, but this says I'm certified

Not exactly cooking, I know, but I took the KCBS judging class back in October and received the envelope with my certificate and badge over the weekend. Looking forward to judging a few comps just to see how others cook and hopefully this will help my competition cooks in the future.

    Who is this guy?

Met somebody "famous" at the KCBS judging class at the Jack. Very nice guy.

    Brined pork loin & chops

a.k.a how to stretch your meat buying dollar. Bought a 5 lb. pork loin on sale @ Kroger for $1.99/lb. Brined all day while at work in a basic brown sugar & kosher salt brine, rinsed, dried and cut in two. Half was cut into 1" chops, the other half was left intact for slicing the next...

ribs & chicken on the Perfomer

Recent cook on the Performer. Since I haven't tried smoking on it in a while, thought I'd try a slab of St. Louis ribs indirect, then add some boneless thighs to the mix too. Sorry for no more pics, but I was doing honeydew work once the temp got settled. Let's just say that the fam loved this...

    First place chicken!

Cooked in the Smokin' in McMinnville competition this weekend. I cooked thighs, trimmed and rubbed, smoked and sauced... all on my EE (1999) Performer. Got first place in the backyard division. Not bad for my second solo competition. Here's my setup. Modest, but enough room to cook two meats...

Teriyaki strip steaks & grilled veggies

Marinated some strip steaks in Teriyaki glaze, Moore's marinade and a little OJ for a couple of hours. Rinsed & dried them, then sprinkled with a little garlic salt & Penzey's Forward before grilling over half a chimney of KBlue and a chunk of pecan wood. Found a nice veggie blend of yellow &...

    Bob C's Chicken Speidini

Ran across this post from Bob Corell from a while back, and since I've been put on a diet (Doctor's orders ) I've been looking for creative and different ways to cook (grilled, of course!) boneless skinless chicken breasts. This looked fairly easy and quick, so I thought I'd give it a try for...

    fish tacos & teriyaki shrimp

Went fishing in Florida a few weeks back and brought a bunch of fish and shrimp home, so I thought I'd grill some fish for tacos tonight. The fam wanted shrimp so I was happy to cook some for them. Finally got a new camera so hopefully these pics come out good. It finally stopped raining for...

What else on the Fourth of July?

RIBS!!!! The setup. Smoking on the Performer for the first time. After about two hours. We are cleaning up the house for a birthday sleepover on Friday night, so I have to go back & forth from outside to inside. So far, the Performer is holding temps very well. More to come...

    Wings on the grill

Grilled 6 lbs. of big ole wings last night. Started with a generous sprinkle of Myron Mixon's chicken rub and let them sit while starting half a chimney of KBlue on the Performer. Added a chunk of pecan and a chunk of cherry, which must have been too dry because it burned up quickly. Seared the...

    Lousy ribeyes and skillet taters

Bought half a boneless rib section because it was on sale, and I am having buyer's remorse. I guess you truly get what you pay for... in this case, a lot of fat. These ribeyes are well marbled, but also contain too much fat for my liking, so they don't look very good even after trimming. Had...

    four pork shoulders

Here's a pic of two pork shoulders just about ready to come off the WSM that I cooked for our niece's wedding on Saturday. I was not aware that what the pork shoulders I cooked were the centerpiece of the buffet table, but was humbled when I found out. We provided the pork as our wedding gift to...

    Pork steaks - FINALLY!

I've been watching Jim Lampe and others make excellent pork steaks, so I thought I'd give them a try. I have always thought that Boston butts were good for two things - pulled pork and country style ribs. Found some nice looking pork steaks @ Publix for a decent price, so they had to go home...

    First grilled pork tenderloin

We found ourselves at a local cash & carry store from a regional commercial food distributor over the weekend. I found a whole pork tenderloin in the freezer marked down to $5 and it wasn't past the sell by date. I couldn't pass that up! This was the first tenderloin that I've not fried and...

    T-Bones & taters

Found some good looking T-bones on sale at that famous French grocery pronounced Kru-gere for $5.99/lb., which was about as cheap as I could find. Even chuck eyes (they rarely carry them) were more than that when I asked the clueless young butcher, who I'm not sure that he knew what I was asking...

I've been slackin' (a.k.a. chicken with crash hots)

I've been cookin and taking pics, but not posting. Sometimes life gets in the way. The gutters are cleaned out, the flower beds have been weeded & mulched and the patio has been washed off. I bribed the fam into helping me over the weekend by cooking some good food. I brined some BSCB's in a...

    Pulled pork sammies for Easter

Since the fam was pushing to go out to eat after church yesterday, I had to come up with something that would make them want to stay home instead, so I found a 5.5 lb. Boston butt @ Publix and smoked it overnight on Saturday. It cost a little more than I usually like to pay for them, but it was...

    Leg quarters & crashers

Found a 10 lb. bag of leg quarters at a local grocery for .79/lb. Low prices don't always mean a bargain, as these still had part of the spine attached, and they required quite a bit of trimming to look decent. Got 'em trimmed up and seasoned with Penzey's Forward, garlic salt and some ground...

St. Louis ribs and pulled beef

Found whole spares for $1.79/lb. @ Kroger, so I had to buy some. Trimmed up two slabs St. Louis style, and rubbed with some Simply Marvelous Sweet & Spicy rub and let them sit in the fridge for a few hours. Rubbed some rib tips to put into some smoker beans and snacking while waiting on the ribs...
