    smoking pork at high temp

    going to try something new this weekend and i need some input. I have a 5lb pork butt, want to cook it at a high temp, say around 325 to 350, at this high temp I guessing that it should take no longer than 3 hours and when internal temp reaches 185*. I will give this a try and see how it works...

    ok, school me on the ceramic dish. i use the brinkman charcoal pan for my water pan, what size dish should i use? do the ceramic dish goes inside the water pan? and a host of other ?'s. so be slow and explain to the short bus rider how it's done.

    after reading all the post about Rancher Charcoal I pick up 3 bags at HD for $1.99 a bag, useing it today to do some ribs (3 racks ) if it works as good as I have been reading here I will go back and buy all I can carry for $1.99 a bag. This stuff better be good!
