Snake method in a kettle question

Great looking cook. I used the snake method for 2 years before I bought my WSM and found it a great method for smoking. At no point during those 2 years did I use fire bricks. I did put a drip pan with water in it to stop the fat from burning. Keep up the good cooks and remember enjoy the process.

1st post...........let's see if I figured this out

Great looking cook T. For the 1st year I used my my 22.5 One Touch for all of my smoking needs and it works just fine. It takes a lot more attention but the food always turned out great. I too wasn't sure if the 22.5 WSM was overkill but after reading many opinions on these boards I realized...

Nice article on Santa Maria style barbecue

I've always wanted a Santa Maria style grill and would have jumped on it for $199, unfortunately they're not available here in N.J. and not online either. Ugh!

    Help.....Briskket done WAY early

Don't forget to probe it to see if it's done. Temp is less important than tenderness. Good luck, I'm sure you'll be fine.

Smoking and serving large amount of pulled pork

I have started with 60 lbs. of pork butt on a 22.5 wsm and it worked fine. After I pulled the butts, I put them in vacuum seal bags with some finishing sauce (in my case some apple juice.bbq sauce and a little of the rub). When I was ready to serve it, I put the bags in a pot of simmering water...

Korean Stir Fried Noodles with Beef (aka "Japchae")

Well Jerome, your pix sent me over the edge and I had to make your dish this weekend and it was fantastic. I ended up using pork chops instead because that's what I had on hand to marinate my only problem was when I went to the Asian market and tried to find glass noodles. Nothing was called...
