    Temp Probe

I recently installed lamp cord rod, nuts and caps in my new WSM. I love it. I found the information here http://tvwbb.com/eve/forums/a/...9052/m/945107275/p/2 . Look for the post from JSMcdowell with pictures on page 2. It worked out great for me. When I'm not using the probes or not using...

    Free wood

You don't find much wood around here. I'm looking forward to trying the alder on some salmon.

    Free wood

My family and I returned from a vacation in Oregon Sunday night. While we were there my in-laws gave me some alder, maple, apple and cherry. My wife suggested getting some tubs and cutting and splitting them into chunck.

    Bisket hash - yum

That was my first brisket. I actually made two for a party we threw. I checked out Costco twice before the party, and they only had 5 pounders both times. I ended up buying the briskets at a place called Smart & Final. S&F was cheaper two weeks prior. My wife and I go fairly frugal on most...

    Bisket hash - yum

I'm fairly new here. This is probably nothing new, but I made some hash with some left over brisket this morning. I used half of a medium onion, a large baked potato, and chopped up the leftover brisket. Fried the whole thing in some butter. Served it with a couple over mediun eggs, toast and...

    New DigiQ DX arrived yesterday

I used the DigiQ DX for the first time this weekend. This was my second smoke on the WSM. As far as I am concerned, the ATC is worth every penny. I used the Minion method. The smoker was up to target temp quickly, stayed dead on the target temp and recovered from opening the lid quickly. I...

    New DigiQ DX arrived yesterday

Thanks for the heads up on the caps. I actually picked up a pair of caps when I bought the hardware. You'll have to let us know how the smoke goes Saturday.

    22" WSM with ATC

I am considering the same issue at the moment. I recently read the Harry Soo interview, near the bottom of the forum. In the article he claims that he never uses water, favoring to foil the pan for easy clean up. I also noticed that he claims to always foil pork and beef with some liquid and...

    New DigiQ DX arrived yesterday

I installed the WSM fan adaptor and the lamp rods tonight. It did not go quite as I had planned. I intended to drill the holes for the lamp rods on the opposite side of the bracket screws next to the door. I guess I wasn't paying as close attention as I should have been, because I ended up...

    New DigiQ DX arrived yesterday

Some good points. I'm thinking about mounting the fan adaptor in line with the upper holes of the bottom vent. I don't want to fan too low, so that it ends up being hard to check. My back gets to me a times. I read something about a temperature difference between an ATC and a Maverick...

    New DigiQ DX arrived yesterday

I'm not sure exactly where I want to put the adapter. I am considering orienting the bottom so that two vents are facing forwardish, and the third toward the back. I think that may put an open space around 3 o'clock. I am thinking that the fan lead is six feet and the probes are eight. I will...

    New DigiQ DX arrived yesterday

My new DigiQ DX arrived yesterday. I am going to permenantly mount the adapter and install some lamp rod for the sendor wires this week. I'm planning on giving it a test run Sunday with a slab of spare ribs and a half dozen thighs. If everything turns out well, I have a big party coming up the...

About to pull the trigger on a DigiQ DX

No. I'm planning on smoking two briskets the might before, using the DigiQ. I'll put two butts on the smokenator early in the morning. I decided to do a big batch of thighs (instead of whole chickens) on the WSM after the briskets come off.

need some input on feeding a large group of people

The thought just occured to me that I would probably be better off with legs and thighs, instead of whole chickens. Thanks for making me think through my plan another time.

need some input on feeding a large group of people

Nicolas, I have a party coming up in two weeks. We're looking at about 75 guests. I decided that best plan was to buy and install a automatic temperature control (ATC) on the WSM. Without the ATC I don't think I can pull it off. I'm thinking I'll put two briskets on the WSM the day before...

About to pull the trigger on a DigiQ DX

Just ordered a DigiQ DX for my new 22.5 WSM. My second smoke will be a couple briskets, a couple butts and 4-6 chickens for my daughter's adoption party. I figured that I did not to take any chances. My wife is being a real sport about my run away hobby. I'm a lucky guy.

    Wild cherry wood

Excellent. Thanks guys. I mentioned it to my wife and she suggested that we buy bins to keep the wood chuncks seperate. I think my hobby is going to get interesting real soon.

    kettle smoking 101 ......

I had good results with a weber kettle and a smokenator. I smoked on that combo for about two years. In read a lot of internet sites and blogs. I still have a lot to learn, but I'm definitely enjoying experimenting. I started with pork. Lately i have been using beef. Brisket will probably be my...
