Dinner party -- making burnt ends

I have a dinner party Saturday for which I am making a brisket, and I'd like to have burnt ends. I was thinking I would cook so that the whole brisket is ready about 5 hours before the time I would serve it, then remove the point, put the flat wrapped in foil in an ice chest and throw the point...

    Is this a Brisket Flat?

Just picked up a nice 11 pounder from Wally World in York. FYI, I know both of the Supercenters in Lancaster have Briskets, although last time I looked they were only select and not very good. Then again, that was during the meat shortage. They had an 18.5 pounder at Wallyworld. I was...

    Is this a Brisket Flat?

Jeff, Did you try this out? I also live in Lancaster and saw these at the BJ's in Centerville. It sure looked like a brisket to me, but I wasn't sure. DO you know of any local sources for brisket? Only place I know of is Walmart.

    First Brisket Underway!

Believe it or not, success! The brisket came out great. The flat was a little too tender so I had to make the slices thicker than I would have preferred, but it was still wonderful. I shredded the point for sandwiches (not enough fuel left for burnt ends, and I didn't feel like starting a new...

    First Brisket Underway!

Oops. Around 5 AM the temp of the cooker was starting to come down (it was at 198), so I opened the vents and moved the coals around. I fell asleep before I could check it again, though, and I completely forgot to check the water pan. At 9 AM the pan was empty and the temp was 327! The...

    First Brisket Underway!

OK, just did the 2 hour, 10 minute check. Smoker has been running hot all night, but this is the first time I've used it. Right now it's at 262; it had been in the 270s, so it's starting to slow a bit. I have all the vents closed right now (except the top, of course); I may crack one in an...

    First Brisket Underway!

I put it on at 9:50 EST. Using Minion method to try and last me the whole cook. One of my coworkers had an old Brinkman smoker she no longer wanted so I have an extra-large water pan in there as well. Going to go keep an eye on temps and smoke me some brisket! Thanks for hosting this great...

Is my first brisket too big?

Update -- I trimmed it and took off 1 lbs, 7 oz of fat. I then used the Midnight Brisket rub less MSG. I'm going to let it sit until tomorrow, put it in overnight and have it for dinner Sunday. Chris -- your brisket guide this month was most helpful. I had trouble following it without a...

Thermometers on sale at Boscov's in PA

Boscov's has digital Timex thermometer/timers on sale today. They're in plain packaging, and it looks like they were originally for Target (it says on the back they were packaged for Target). Normally $24.99 they are selling for $9.99. I picked up two at the Boscov's in Lancaster tonight...

Is my first brisket too big?

Just got my replacement parts from Weber and now I'm going to cook my first brisket. I picked one up at Walmart, and it's 14.5 pounds. After reading some of Chris's recipes, however, I'm worried it might be too big for the WSM? Should I be worried? Also, I'm assuming I should count on taking...

WooHoo! Finally a good water smoker!!!

Tom Did your WSM have any problems out of the box? Mine came from Amazon with a bad paint job and a small dent on the lip of the body. Weber is great and is sending me all new parts, but I wonder if this is isolated or if there is a bad batch. --Erik

    ARGH! Defeective from the factory!

I just went to put together my new WSM and first I noticed that the bottom part of the body (with the three vents) had a poor paint job. The paint ran into a big clump on the inside, and the rim had a spot with no paint whatsoever. The middle part had a dent on the rim and no paint, and paint...
