    Smoking in WSM vs. a standard Weber kettle

    I have used my kettle with smokenator and the results are great.I do most of my smoking on my ceramic grill now but in the summer if I'm home for the day I will smoke things on the kettle with the smokenator only if its going to be a smaller piece of meat or ribs.

    skirt steak

    Here is my first try at skirt steak. I stuffed the mushrooms with steak onion underneath the steak and some peppers and cheese.Skirt steak was really tasty.I will be cooking these more often.I threw the steaks on early so the grill marks were not good.I cooked one skirt and froze the other.

    Keeping Brisket hot and moist

    I wrap mine in foil and throw it in my crock pot , my crock has a insulated travel bag works good.Thats if the brisket will fit.If not I just wrap and use the crock bag.I also do the same for the butts.

    I have a stoker I use on my grill dome.I am going to buy the adapter for the kettle.Before I do that I want to try my smokenator with the rotisserie and see how the results are.

    It didn't turn out as tender as I wanted.It was about 15 degrees out and with the holes from the rotisserie I couldn't keep my temp under 400.I even had my bottom vent opended just a crack and I think maybe I lit to much charcoal to start.I guess there is a learning curve using the rotisserie...

    Preferred network set-up for a Stoker

    If your able to just hardwire the stoker to the router that your pc is hooked to I would go that route.I ended up doing that and using port fowarding and then I could check my cook anywhere.My wire was able to be hidden easily or I would have went with the gaming adapter.
