    How do you reheat chuck roll?

    I've used apple juice like Rath suggested. I have also used beef broth and enjoy the taste more than the apple. Either way just don't blast it with heat, take your time. I have a foodsaver and it's the best. Glad it worked out well for you. I'll be doing a chuck roll again in a couple of weeks...

    Brisket question

    Wrap it in foil with a little beef broth and leave it on the WSM. Take it to 195* and use fork test again. If it's wraped in foil it won't dry out.

    Rob, It sounds like a plan to me. Why wouldn't it work?? I like the sauce John Mason posted. It sounds great. My wife usually puts mustard on chuck roll and brisket, but she's wierd (she married me!) Good luck with it and don't forget the pics!!! Nick P.

    Minion for multiple meat?

    Brandon, I agree with Greg I use Minion for all cooks except poultry. There isn't ant waste if you snuff out the fire after the cook (close ALL vents). Day or two later sift through the ashes and reclaim all left over coals. I sift the ashes with a piece if wire mesh. Nick P.

    Good luck to you. I have a son in the service (USMC) and he just got stationed in Hawaii. He has been in for almost a year now and it's only a matter of time before he is deployed. Enjoy you last smoke before you go, from what I understand MRE's really suck. My prayers are with you. Nick P.

    Dave, I too got a bad ET-73. The customer service at Maverick is great, no questions asked, just sent me a new unit. I also have a Guru and hardly ever use my ET-73. I use it in the house now when I'm using the oven. Nick P.

    Henkels for me. I own a set I bought in Germany 20 some odd years ago! The plastic handles are starting to get a crinkle finish on them from always being put in the dishwasher. They hold and edge great. I've never had them sharpened but I do hone them every time I use them.

    ET 73 Transmitter differs from Receiver.

    When mine kept doing that I called and they sent a new one. I don't remeber if it was the transmitter they sent or the reiever. Lots of folks had problems and the customer service is GREAT! I just finished using mine today with no problems.

    That bad boy will take close to 24 hours. My first roll was 18.75 pounds and took 24 hours. They will wait and be happy they waited after they taste it. Good luck Daniel and enjoy!!

    Brisket and a Chuck Roll on the same cook? Insanity?

    Both are beef. Pork would also be nice. The chuck roll will feed a lot of people! No matter what you cook, they will LOVE it!!!! I've never had any complaints yet with smoking. BTW, I'm only a stones throw away Nick P.
