    No seasoning cooks

    Depending on who is eating with us, sometimes I save seasoning for after the cook. One family member is super-sensitive to salt, so I usually go light or not at all on that when she is over.

    Everything came out great, thanks for the advice! Next time I'll use a bit less salt and pepper. They were probe tender at about 205. Also made some grilled twice baked potatoes and grilled asparagus.

    Thanks! They are looking good...I've been at about 255 but will increase a bit. I decided to just go with kosher salt and cracked pepper. I've got a maverick in and will check them for tenderness when they're in the upper 190's.

    Thanks everyone, this is really helpful stuff! Using these formulas, I think that in this case, six 7-8 pound butts will be more than plenty. Now I just have to hope for a good sale near the event date!

    Thanks guys - one other sort of related question, and sorry if this is a dumb one, but how much more wood do you use for large amounts of food? I am finding 4-5 tennis ball sized chunks good for 1 or 2 butts. It doesn't seem like too much more would be needed for 6 butts.

    Enjoy! I can't stop using mine; I have done about 5 or 6 cooks in less than a month. I would do more if I could figure out a way to retire early :)
