    I forgot which one had the Honey Bacon BBQ and which one had honey Hog . Switch the ribs so the other one is on the coal side and gave a quick apple cider- Worcestershire/ water spritz. Bones are just starting to pull back.

    I prefer lump unless I am cooking a brisket which takes 12 + hours. Briquettes last longer for longer cooks.

    probably my photography, the hex nut could be installed to where the flat edge aligns with the lip of the bowl.

    Some people are silicone grommet people, some prefer using cable glands, others like to notch their bowl. I am a nipple person. (lamp nipple, that is) ;) Low profile-clean look , small size hole to drill & it caps off when not in use.

    Thanks for the response. My ThermoPro TP828 BW has these thick barrels at the end of the probe. That barrel is too thick to put through my probe grommet. My solution is to order replacement probe wires that don't have that thick barrel at the back of the probe.

    I wrapped my brisket a little early last time and I felt like the stall was extended when I did that. I went by internal temps and overlooked the other indicators of wrap readiness.

    Do you have any theories on how that support burned through like that? Is it from charcoal banked against the side of the kettle ? Maybe we should always use charcoal baskets or charcoal rings and avoid banking Lump charcoal directly against the kettle wall.
