BBQ Restaurant in Marco Island, FL area?

We found "Famous Mel's" right across Collier Blvd from our hotel. Not bad. Sauce was interesting...very sugary, with lots of molasses and brown sugar. The waiter offered us the 2 for 1 margarita special. They were out of the baked beans so they offered a double side of slaw, which was a good...

Low cost, non computer connected temp control?

Sorry if this answer is somewhere here on this board already..... I am interested in a temp control system, but don't want to lay out $200-$300. While I'd love to have the connection to a computer for monitoring and logging capability, I'd be happy with just a fan connected to a thermostat so...

    Overnight at the cottage

We live on the edge of a good amount of forest and never had any issues like that. I've always assumed that the smoke and the heat of the unit would keep any critters away...

Be honest now, what DON'T you like about the 22" WSM?

While I love the big access door for adding additional fuel, it is still difficult to add water to the water pan without spilling any into the fire (and risking putting it out). This weekend I made sort of a trough with some tin foil. I stuck one end into the pan and poured the water from a...

Thermometer busted after only 2nd use

As it works out, it seems as though I was a little too sensative...or maybe it was the Sam Adams. The thermo is fine, it had just gone right by the top marker on the dial. When things cooled down, it went back down through the regular settings. Alll is fine and I now have an extra...

    Outdoor Kitchen

We're starting to plan a more elaborate outdoor kitchen set up on our patio. You know...built in gas grill, fridge, sink, burners, big counter, etc. The question is...how do I incorporate my 22.5" WSM into this set up? The wife loves the food that comes out of my WSM, but would prefer to...

For Chris A - Adjusting procedures for the 22"

I'm thinking this one's for Chris A, but anyone can chime in as usual.... All the procedures shown on this site were written for the 18" WSM (I'm assuming). What adjustments should I make since I have the 22"? I'm thinking about stuff like how much charcoal to use for an overnight cook...if...

Thermometer busted after only 2nd use

Anyone else had issues with their thermometer on the new 22"? The next day after smoking some chicken wings, I went outside to place the cover on my WSM and noticed that the thermometer was pegged (needle at the highest reading). At no time during the cooking session did the temp go above 350...

    Beef Short Ribs

I've done a search on the boards here for Beef Short Ribs without much success. My ribs were purchased at the local Whole Foods Market for about $4.99 per lb. Here's what they look like: Is smoking these something I want to try? I found only one post here that spoke of success so I'm a...
