You know you're getting old when...

I still use the "Monkey Ward" meat grinder that my wife and her dad used for sausage 50 years ago.(y)

    What are you cooking today?

You should've hit the Korean place up on Riverside Blvd...I really want to give their fried chicken a try one of these days! I have a 2-bone rib roast on the kettle rotisserie right now. It's nice being an empty nester.;)

12 BBQ chains ranked from worse to first.

I'm a little late to the party, but I didn't see this mentioned in the thread and it's worth knowing. Dave Anderson hasn't been associated with Famous Dave's for quite a few years now. After he got out he started a place called "Jimmie's Old Southern" that has a few locations under his son's...

    Finally pulled the Wagyu trigger

Thanks for the replies! One thing I forgot to mention is that when I ordered it at the meat counter, I became some sort of mini-celebrity. A few people gathered to watch it being cut, and a couple of them asked me if I'd had Wagyu before, how I was going to cook it, etc. So clearly I'm far...

Illinois > Brookfield: Beach Avenue BBQ

Last summer my wife and I met some friends for lunch at Beach Avenue BBQ, located on the square in Brookfield, IL. And while I got a photo of the square I forgot the building...oops! This is what greeted us when we entered. Nice! The special that day was a smoked double/Iowa pork chop. A...

    Chuck brisket burgers

The only way to fly! Smart move, loading up everybody else with veggies to leave more beef for you.;) The title of your thread has given me the inspiration for my next (ok, my first) book: "Chuck Brisket, Barbecue Detective"!:)

    Finally pulled the Wagyu trigger

It was bound to happen eventually, no matter how many times my wife said, "No!";) Back in November I finally convinced her to let me try a piece of American Wagyu (birthday money came in handy). This is an A5 rib steak that was cut to spec at the Hy-Vee in Janesville, WI. Because of the...

    Old Bench Vise

And they're definitely vintage!;) When I was chronologically young my dad had an old cast iron beast of a Craftsman vise that he'd gotten from his grandfather. In the early to mid '80s the screw finally broke so he took it to Sears because hey, lifetime warranty. The clerk called over the...

Indiana > Lafayette: South Street Smokehouse (Closed)

UPDATE: SSS closed permanently this past Nov. 14. Based on some of the comments I saw in a Reddit thread, it might not've been what it once was. Chris, could you maybe add "(closed)" to the end of the thread title, please? Thanks.

I'm guessing there was a minor adjustment to your appearance after that.;)

    Pulled pork second stall?

If the customer was happy then take the win. ;) I have no experience cooking for larger groups, but maybe a quick chop through the parts that didn't pull would clean things up?

    Unexpected

You're not from Wisconsin, are you. ;) There's no way I can cook on it because it's much too nice, but at the same time it was meant to be used. I'm conflicted!

    Pulled pork second stall?

You've been here awhile so I know you know what you're doing, but how big was the butt (unless you were cooking a picnic) and what was the temp? Thermometer known to be accurate? I see a 9 hour window from 8 to 5 and that's not allowing for rest. BTDT...wait, we're still talking barbecue...

    Unexpected

This afternoon I got a text from my younger daughter: "Alex and I will be stopping by after dinner. We have a gift for you." So I'm puzzled. I replied, "It's probably not as nice as this steak." Hey, it's a pretty nice rib steak! And she wrote back, "It'll go well with that." So they...

    RIP: Rich Dahl

To paraphrase Irving Berlin (and Willie Nelson): Nothing but blue smoke, from now on. No burn bans and charcoal 24/7, Rich.;)

Can I borrow a brisket or two?

Yeah, there's a Chinese elm in the back yard that I'm starting to get a little concerned about.

    BISOTB?

Pretty good, actually! I took them off the grill when they hit about 150 and wrapped them in foil for about 45 minutes, so they were still plenty hot and not at all dry.
