    New WSMs for 2009

Chris Excellent work on reviewing this and the objectivity and experience you have brought to it. (It’s also reassuring that my “problem” isn’t extreme) I have seen the calls for a bigger WSM, I recall your comments on the cost of the tooling and remember people citing the 22 ½” kettle tools as...

    wsm vs BGE

I have both. If I had to have just one the BGE would win (now). If I hadn't got the WSM I'd never have got the BGE. I don't want to give up my WSM. The WSM is simple to use, clean, move about and has great temp control and this site provides excellent support and inspiration. If I'm going to...

    WSM Stacker

Funny - I just came across the product today on Fred's website - wait a minute those guys are in the UK. Would you believe it, for once we get something decent here.

Hand blender, stick blender, immersion blender? *****

I have a Braun too. Mine has a detachable stainless business end. The previous one had a fixed plastic one. Detachable is great - goes in the dishwasher and it means there are a few other accessory things that I rarely use. A word of caution though - the metal business end scratches nice...

    siverside (top round?)

I'm not sure there's enough connective tissue in a silverside - I may be wrong - but brisket is cheaper still. My only difficulty is getting a suitable size - either tiny and rolled or infeasibly large - I took to buying brisket by the foot from a butcher/farmer near me a few years ago.

    One Touch Venting

Light your chimney over the gas it's the easiest way. For a full chimney I usually put the gas on for 5 (or up to 10) minutes and leave the chimney for another 5 or 10 minutes before emptying onto the grate. from there I usually turn the vents down a bit too but open them up once the charcoal...

SMOKEY JOE PLATINUM AIR FLOW PROBLEM

Remember you have two factors here: 1. Surface area of coal grate allowing more coal. 2. Proximity of coal grate to cooking grate. I always find the small grills don't have enough distance between the cooking grate and the charcoal grate, meaning one has to keep a better eye on the vents...

    Go-Anywhere vent orientation

I have had a charcoal go-anywhere that I got from ebay for some time, however I was a little irritated that the vents open up once it is all closed up which means it can spill ashes (or even re-kindle) once you pack it up. I recalled using my brother in law's before this and not having the same...

Grates: 7mm SS vs 9mm SS vs 11mm vs PCI

FWIW - as I recall when Weber turned the "old Genesis" into the "new Genesis" the BTU was upped in line with the increase in grate area. However the real issue here is how you are cooking - I have been thinking about this a lot lately, being the very grateful(pun not intended) recipient of PCI...

    Grill Wizard

I like mine but maybe it's different - mine has a couple of (replaceable) standard scrubbies (more like wire than shavings) on it. Sounds like you need to break it in a bit!

Concrete driveway exploded under my chimney!

I have had the concrete problem too, despite reading about it on here a couple of years ago! I used to light my chimney on my 18" grill, then I got a performer and sent the 18"er out on permanent loan. Recently I got a rotiss on ebay - lit the chimney on the performer and set up for rotiss...

    Charcoal in the UK

Hi Mark In my experience the Homebases/Tescos and so on change their charcoal each year and just have it own labelled so I usually buy a bag or two and try it before I commit to a bulk buy. In the past I've had good experiences with both Homebase and Tesco, avoiding the instant light. I've...

    Charcoal in the UK

Your timing is probably a little early - the "sheds" (B&Q / Homebase et al) usually have some pretty good own brand briquettes by now (they vary year on year) and often stock Heat Beads too - I thought they were Australian but perhaps the brand has been bought up by Weber. I came across some...

Pics of WSM Piedmont Double Water Pan Mod and Detailed How to Instructions.

Basically if the legs and vents have melted it may be time to worry about the zinc hardware? (what exactly is the issue anyway?) (on edit - oops just read another thread about the zinc thing, sorry) Is the standard hardware stainless? As for the freezing issue - why not leave the lower washer...

Would You Buy a BGE if..?

It may be heresy here but I'm sure you'll love that egg and I'm sure you realise that $200 is a steal. I hope you got it! There's a lot of useful info out there, I find the BGE forum hard to navigate, it makes you realise how well Chris has done with this forum - thanks Chris. TNW is good to...
