    Bryan, I bought: http://www.crateandbarrel.com/family.aspx?c=500&f=11730 at the Crate&Barrel in Austin,Tx. Seems to do the trick simply and cheaply other thna ahving to lift the lid to check. I used it on my Kettle yesterday to do a ham.

    Just when you think everything is ok.....

    Almost but not as bad. Had ribs on also. Was loosing temp so I thought I'd leave the access dooor off to get a little extra air. Didn't know ny thermometer would read 500 Deg. Saved the ribs though with only a little charring.

    Weber Chimney

    I use metal coffee cans with both ends removed. I have 1,2&3lb cans with my chimney. The cans help keep the briquettes together when I only need a few. Our coffee now comes in plastic so I will have to find a different can when these burn thru.
