    They came out great. I used the recipe at Meat Church as a guide. Used some pork/rib rub, KC Masterpiece sauce, and honey. Didn’t take quite 3 hours to get to 195° where I wanted to pull, then sauced, honey, more rub, and back on for another 45 mins.

    Good to know. No issues with or concerns about rust? Here at the beach basically anything other than stainless or enameled rusts out in a year or two.

    Thanks Bill. My old WSM doesn't have a dedicated access spot for the probes. I've always gone under the lid realizing the risks. Now that I have the chance I may take the opportunity to modify my WSM with a better access method for probes.

    I can think of two ways for salmon to get that tan color, either by smoking or with a glaze or rub containing sugar. I don't think there are enough natural sugars in salmon to give it that color.
