    Butter or Margarine

I agree with Len. It depends on what you're cooking and how you're cooking.

    BGE or WSM

Just my 2 cents here.... When I was shopping for my Performer, I went into Barbecues Galore. They tried to talk me into the BGE. I went home and did some research. The price was twice what my Performer cost, and that didn't even include the stand to put the BGE on. Also read of some users...

    Coleman..... the other gasser.

I have a Coleman tailgate gas grill for camping. Used it in the back yard one time when wife didn't want the house smelled up from something. Forgot about that. Thanks for reminding me I DO have that option.

    Wife's special request...

Look really good to me. No sin IMO. Perhaps we all get to carried away with rubs and sauces. I like the idea of minimal seasoning. I bet they were good. I should do that just to get back to the basics and back to what's important. The meat! Good job.

In need of a sauce recipe

Last PP I made I used this Carolina style sauce that has a little heat and not too sweet. Just simmer it all together to dissolve the salt and sugar. 1 cup apple cider vinegar ½ cup ketchup ¼ cup hot sauce ¼ cup sugar 1 tablespoon salt 1 tablespoon black pepper 1 ½ tsp red pepper flakes

    Outside/Inside Spares

Tasty looking ribs Bob. I've done the outside/inside rib cook a few times but for opposite reasons. Living here in Arizona, cooking LOW and slow mid summer can be a challenge. My first smoker (a brinkmann) is difficult to control. A few times I gave up and pulled the ribs after a few hours...

    Need Help..... getting frustrated

You're doing fine Rick. Cooking with charcoal takes some patience. As everyone here says, make small adjusts and give it time to react. Closing all the vents down WILL extinguish the fire. Keep in mind that your cooking environment can effect how your smoker reacts as well. Outside...

    Thank you Andy Wasserman

Andy Wasserman posted a Turkey and Stuffing Fatty this past week. Wife liked the idea and wanted me to give it a try. Forgot to get celery so I used a diced up bell pepper with the onion and added to the stuffing. Assembly was messy. Meat was really wet and sticky. Maybe thats because I...

    Sunday night steaks

RGleason, I do have that set, but I don't think she paid that much. I think she got them for around $30 through some promotional offer. I've seen the same set at Ace Hardware for $50 before. I do like the seer I get with them. I usually put the steaks on for a few minutes, 1/4 turn for a few...
