    All tastes the same?

I can vouch for what everyone is saying here. Too much is bad and really over powers your meat. When I started smoking, I was under the impression that if I wasn't seeing smoke I wasn't smoking. I was constantly shoveling wood chips in for 3 hours. Didn't take long to learn, that that was...

    First cook on wsm mini

Thanks for advice Dwain. Good to know about the charcoal grate issue you ran into. I think we have a can I use in the pantry. Just need to use whatever it is and save the can for the mod. Even though I had to keep clearing the ash, I was happy the mini held it's temp pretty well. Much...

    Tweaked grommet mod

Not boring me at all. I like seeing all the mods people come up with. I really need to do this mod. I keep passing the probes through the top vents. Such a pain in the back side when you need get into the smoker.

    First cook on wsm mini

Here is my mini and my first cook on it. a single rack of spare ribs. Temp started to drop about an hour in. cleared the ash and stirred coals. About an hour later is started dropping again. Same response. So i was having trouble keeping the ash clear of the bottom vents. When I built it...

    Happy Thanksgiving

Hope everyone had a great day. Just me and my wife this year, so I did a 7.5# turkey breast on the WSM. Keeping it simple. S&P, onion powder and garlic powder. The cook needed a little snack to get things started. Start Finish. Used a few small pieces of cherry. Cook time was about 2...

    Best all purpose dry rub?

Gene is right. Mix your own. There are so many combinations you can play with. To me that's the fun part of smoking and grilling. I have a bunch of recipes I'm still waiting to try. For me Chris Lilly's book "Big Bob Gibson's BBQ Book" does a great job at showing how to construct a rub and...

    Burger rub?

I'm a Weber fan and try to use their seasonings too. I use their gourmet burger seasoning for burgers. Also use their Kick'n chicken, beer can chicken and veggie grill seasoning.
