    Thanks, I don't know anything about Ducane brand and it would need to be converted from nat gas. Seemed a little high to me but I'm not sure how they are constructed.

    Did 2 cast iron pizzas on the two grills last night. Learned that the coals need to banked on the sides not under the pans waaaay to hot. Was still good just burned a little.

    Agrred! The fresh loaf is a real good source of info and people! Under recipes look at the blueberry braid. OMG! Still havent tried it. Floyds foot ball batards are my go to for yeat bread.

    Jim do you bake your loafs in a cast iron pot? Ive found that helps the rise bigtime. Also have found two tablespoons per loaf of herbs de Provence or whatever its called adds a real nice flavor.

    Some good news regarding vacuum sealer bag rolls.

    Not sure if you guys have noticed but I bought a 4 pack of rolls (ziplock) brand at Menards a while back and they are much thicker than the food saver brand. Just an FYI What brand are you guys buying? Ever get freezer burn on long term storage with any of these bags?

    Well imo the WSM is a single tasker where the performer can do both. In fact ive had really good results smoking in a kettle so if you have to part with one i would send the wsm packing. Just my opinion. my smoking goes in phases anyway. good luck!

    Kyle- In my 18" WSM I run a dry pan and never noticed much difference. I load that thing to the top with coals and never need to refill but your bin is smaller so not sure if you can avoid that. In my experience, I like to run it hotter for better fat rendering so around 250 or higher. That will...
