I should add, My turkey was 12 lb. and I used 1/2 of what is shown in the video. I used 1 bottle of brine, 1/2 gallon water, 1/2 gallon apple cider, 1/2 C Diamond Crystal kosher salt.

I used that exact brine and method for one of my Butterball enhanced Thanksgiving turkeys. I found no adverse effects of it not being a fresh turkey. In fact, I'll call it one of the best turkeys we've made so far.

I agree with BFletcher that you dumped the coals too soon. You could have cracked your lid while letting it preheat and that would have gotten the charcoal fired up. Also, I don't think 1/2 chimney was enough charcoal for those burgers. 3 lb for 5 burgers....your talking 9+ ounces per burger...

Bird 1 of 2. Both spatchcocked. This one was in a wet brine overnight, bird 2 is dry brining. Both are air drying in the fridge until tomorrow. I’ll be smoking them tomorrow to take some of the stress away from Thanksgiving morning.

Yea, the salmon looks really good. But What about that wine? I’m a sucker for a cool looking label. It looks to be on the higher end of what I normally spend. Was it good? And…can you tell a difference with the plank.

Had to go to Home Depot and Lowes this afternoon (I hate working on plumbing) and HD had twins for 17.98, Lowes 21.98. Passed on both - shook my head at lowes.

My favorite has been Meat Church’s Holy Cow. It went very well with the sauce.
