    WSM 18.5" water pan question

MNunez, I have an 18.5" water pan that I do not use. Although I live in Menifee, I go to Huntington Beach regularly for golf. However I won't be going until the end of the month (heading north to visit daughter). If you want mine, we could work out a meet. Message me if interested.

    Replacement grates?

This is the latest that some are talking about. Although pricey, I will be getting one soon. https://www.amazon.com/exec/obidos/ASIN/B01N5A67BY/tvwb-20 You can read comments in the "sticky" section or here...

    What size is this WSM?

There is a "notch" mod that goes between the mid section and the lid. Look it up in the "mods" section. Best if used with a gasket, I believe. Clean up the grates, ditch the water pan :o, and get a foil wrapped terra cotta plate and you'll be good to go!

    Pork Butt Help

Matt, yes, additional time would have resulted in more tender meat. Looking at your pictures, the 1st looks as though you cut into the roast. A properly done pork butt would fall apart. The last picture looks as the the bark hadn't truly set yet even though it seems to have sauce on it. The...

    Pork Butt Help

On your initial internal temp of 195, you most likely were touching the bone. Six hours is way short for a pork butt. You were probably just entering or nearing the "stall" phase. Normally a 12-14 hr. cook. Also, you should use internal temp as a data point, but verify by probing for...

Smoke from adding charcoal and emptying charcoal ash during long cooks

If your unit sits up on blocks above the surface, you shouldn't have an issue. If is sits closer, you "may" get some heat discoloration. If you like to tinker (which I do), I would mount it below just as a precaution. Also, if you ever take it with you camping, park, friends, etc. you'll have...

Smoke from adding charcoal and emptying charcoal ash during long cooks

Colin, You could also move your heat shield to the underside of your smoker (look in the mod section for details, different ways). This helps with ash issues and airflow. Here is the link to my thread and mod...

    Auto temp control for WSM

The PartyQ is great. Not as expensive as the others, runs off batteries and can be converted to a "plug-in" style if need be/wanted. If you get a good set (or two) of rechargeable batteries, the PartyQ is a breeze to operate. The only issue with rechargeables is the "nipples" on the positive...

    Lid Hinge Depth Question

    It protrudes 2" outside edge.

Cover fit for 18.5" with handles and hinge

The hinge adds exactly 3 inches to the top rim circumference, so I would say NO, your stock cover would not fit. If you had fold down handles, yes it would.

    WSM 18" just arrived!

You can "store" it with the mid section inverted. That way, water will not run into the smoker even if the cover leaks. Also, I believe it is only the seams that leak. A good sealer on them will help. Enjoy your WSM!!!

    Casters for a 14.5" WSM?

Has anyone put casters on their 14.5" WSM and if so, are they useful? My brother-in-law just happened to have 3 really nice casters and I replaced the ones on my 18.5". Not wanting anything to go to waste, I'm thinking about using my old ones on my 14.5". Yes, the 14.5" is small and light...

    Gasket TOO Tight?

I got the same kit, but did not use any material in the lower/mid section (zero leakage). I used excess material for the lid and door for my 14.5" WSM :)

    Gasket TOO Tight?

Typically, the gaskets DO NOT go between the mid section and the lower since you have a "rolled" section. Rarely do these sections leak because of the tight fit. Gaskets are used for the lid and door.

    PartyQ ATC for 18.5" WSM?

Yes, the mod works quite well with the newest PartyQ. I use rechargeables, but have the mod as a backup. Got a 6v1a adapter from Amazon for $2.55 including shipping!
