Final cleaning you want something that will not attract moisture. Acetone is your best bet. Mineral spirits IMO leaves a slight oily film and denatured alcohol while a good degreaser is hydroscopic. So I'd place Acetone 1, alcohol 2, and spirits far 3
It's good stuff and it's not going to take a lot and you will get a lot of milage out of a can. I have no clue what the stuff is or how it works only that it works

No, nothing like tying anything down or jumping anything. It's in the settings. My understanding is once it's up to full temp on "grill" setting, after the first time the lid is opened the plate will stay on but the upper element will turn off
As noted in your first thread the photo is for an entire griddle not just an insert. Were you planning on buying the entire griddle and taking the griddle portion off?
