    When I spin a bird I put my spice and some butter under the skin and truss the bird. I cook it around 375 for about 1.5hr. The skin browns nicely at that temp. I pull it when the temp on the inside of the thigh reaches 170.

    I have the Veranda cover for my Genesis too. Beats the hell out of Weber's cover. It's the medium and does fit like a glove. I'd try the small for the Spirit.

    Spares too fatty

    It's sounds like you cooked them plenty long enough. The only advice I can give you is to trim as much fat as you can before you smoke them. I trim spares as lean as I can. There is always some fat around the grisly end of the ribs that is not going to render.

    The The BTU/sq ratio might be a little better in the Spirit but it's not so much better as to make a difference in efficiency or performance. With the Genesis's design and double walled hood it is probably more efficient than the Spirit, not needing the extra BTUs.

    I don't worry to much about exact temps, I just keep it under 275 and foil at 160 internal. Haven't ruined one yet.

    Rubbing your meat with a little olive oil until your grates are a little seasoned will help too. I have SS grates, love them!

    I cook my spares at around 300* and they cook twice as fast and turnout great every time. I have basically mastered a 1-1-1 method.
