    I am another fan of Victorinox. Have had several for years and love them. You can't beat them for the price. Yes there are better knives out there if you want to pay two, three, or four times the price. I use this one a lot for ribs or my 10" Chef's.

    I have a natural gas grill. I love not having to full with tanks anymore. I was lucky, my gas line ran along the wall in the basement right behind my grill. It was so easy to tee off of it and run a line outside.

    Trouble getting heat up

    The meat will act as a heat sink. Are putting meat on straight from the fridge? If so it will help to let it warm to room temp before putting it on. Raising your initial temp will help with the drop. Also propping the lid open slightly will help with air flow and bring the temps back up faster...
