    Thanks Bruce. What about those brackets that hold the wood slat's on the bottom. Those need to be replaced as two slats fell from rusting through. How would you tackle those? Thx!!

    I too would like to know what you used on the gray plastic knobs and ignitor to clean those up without harming the plastic. Also, are the Z-Brackets for the wood slates on the bottom still available? Great Job!

    Imho, the deal Costco has going on the 4880 kit is hard to beat. I like the autos as you can still run them manually too. I'll run the vacuum on juicy meats such as pulled pork just to the point that the juice starts leaching towards the seal.

    An old dog CAN learn new tricks...

    I did one out of the four pack you get from Costco, ran it to 165 with no foiling and it was just ok. I have the othe three in the freezer still. I might try foiling after 160 and running the next one up higher and see what happens. Thx.

    x2. I never found a need to foil to yield a nice juicy butt. However, if I did, I too would use a pan, and simply cover it.
