    look up a recipe for "scarbelly wings" if you want to get a little exotic. you inject the wings with a mixture of hot sauce and butter, then smoke or grill them. definitely recommended :wsm:

    i usually smoke mine around 350 until the IT gets to around 155, then pull it off and let it sit for 20-30 minutes before carving.

    Baby Back ribs on the 18.5"

    i've seen pictures of folks who roll the ribs up, attach the ends with toothpicks, and stand them on end to fit more on there. i've been using rib racks, but the last few times the ribs were larger and tend to get stuck in them - easy to lose some meat when pulling them out.

    another one who does not normally clean my grills/wsm, other than the exterior with some grill cleaner. i do scrape the grates after each session, but that's about it.

    the lid thermometers are known to be wildly inaccurate. only thing i trust are my maverick food/grate probes.

    i don't use water, but couldn't you just dump it into a 5 gallon bucket so that you can easily transport it to a sink or wherever it's going to end up?

    wouldn't an open lid defeat the purpose of smoking altogether, since all the smoke would just escape instead of bouncing off the dome lid?
