Looks great Andy!! Did my first ever brisket (flat) on WSM last week using HH method and it came out pretty good. Took about 5.5 hrs.

Nice report. Worked in Manhattan back in the day when I'm not sure real bbq was a part of anyone's vocabulary or consumption. Good to see that's changed. Of course good pastrami or corned beef at the Stage Deli or Carnegie Deli was and still is a great way to eat brisket! Thanks for your posting.
