Definitely raw. The skin is very light in color, even indirect it would have picked up much darker tone.

Are these particular handles only for the 18"?

I can get 5-6 pounders at Stater Bros. Food 4 less sometimes has them in they cryovac.

Come to think of it. I'm probably only going to be using one probe anyway. Just to measure chamber temperature. So I can probably drop the probe in through the vent. I can't wait to get it, it's going to make overnight cooks that much more relaxing!

Does running the maverick probes underneath the lid of the wsm create a big gap where air escapes?
