Thermoworks Pro Series Back on Sale -11/15

Just want to give a shout-out to the ThermoWorks folks. One of my Pro-Series® High Temp Cooking Probes purchased less than six months ago stopped working. They carry a six month warranty and without hesitation, the tech support rep offered to send me out a replacement. Excellent customer service!

    Servo stutter

Thanks everyone. Tried a new cable and still having the same issue. I've got a v4.2 and when I ramped up the fan on manual mode to 100% from 0%, the servo would open slowly. Now, it opens in increments of 5%.

    Servo stutter

Just built a Heatermeter 4.3. Everything seems to work well with the exception of the servo. It does not move smoothly when opening/closing. Instead, it seems to stutter. It will open/close to the desired percentage, it just does not do so smoothly. Additionally, if the Heatermeter while in...

    Ribs over two days

I've got some baby back ribs that I want to smoke. Problem is, both today and tomorrow are busy and we're on a schedule. So, using the 2-2-1 method, I'm thinking about cooking the ribs two hours today on smoke and two hours in foil. Then, tomorrow, just before dinner, cook the final hour on the...

    GAS-ASSIST Performer Users....

So, are you only supposed to run the gas for 3-5 minutes and then let the chimney sit for another 10 minutes or so? I let gas run on the full chimney run for the full 15 recommended.

So this happened over the weekend

Productivity at work today will be pretty low while I look at different grilling recipes for ideas. Already looking forward to the Thanksgiving bird on the grill this year. Looking at making a chicken on it this weekend. May have to put up a tent as rain is in the forcast.

So this happened over the weekend

My new Performer Deluxe arrived Friday. Thankfully I was working from home and took some time in the afternoon to put it together. Fired it up that evening and cooked some burgers. The Mrs. made some yummy steak skewers Sunday afternoon and I cooked those. I thought I was in love with my WSM...

    Performer Problem

I rolled my Charbroil to the curb this weekend. Didn't even think about it, just rolled it there, walked away and within 15 minutes it was gone. My Performer arrives tomorrow. The Charbroil was a piece of junk. While I know I should be increasing my collection, I don't want it bringing down the...

    Butts sticking to grate

Appreciate all the replies. While this is only my third time on the WSM, I've done others in my Gaser, and never had an issue. I'll grab a big spatula next time.

    Butts sticking to grate

Pretty sure pit probe is accurate. I didn't foil and based on reading, I thought 18 was okay. You think it went too long? The pork was still good. Not the best I've done, but far from bad.

    Costco Pork Belly

The one I picked up from Costco was a nice 10ish pound boneless slab. I've gotten the bone-in from Restaurant Depot in the individual slabs. My RD does not seem to be selling the bone-in anymore. I've also gotten a case of boneless from RD (didn't sell individual slabs of boneless). But that is...

    Butts sticking to grate

Smoked four butts on my 18" WSM last night and into this morning running about 235* and bumping up to 250* at the end when I added some extra fuel and things got a little hot on me. When I went to take the butts off after nearly an 18 hour run, all four stuck to the grates. I've only done butts...

Home Depot early spring KBB sale?

Virginia has the same deal at Home Depot. The one on my way home from work has over 600 bundles. Planning on stopping to pick up 2 or 3.

    Costco Pork Belly

I know that many folks have been getting their pork belly from Costco for some time. The one near my house in VA has not carried until just recently. Was doing the monthly run and happened to check for it, and there it was! $2.89 a pound.

    Pork Belly Too Thin???

Picked up a case of pork bellies from Restaurant Depot yesterday for about $2/lb with the skin. Got them home and they looked really thin, maybe an inch with the skin. They were large slabs, folded in half and frozen in paper. This seems much thinner than some of the slabs I've bought from the...

New Year's Eve Wine Oak Tri-tip

The more I see pictures like this the more I want to push my Char-Broil to the curb and pick up a Weber Performer.

    Pork belly troubles

Started about 12 pounds of pork belly this morning at about 8:30am. It's about 53, overcast and light rain on and off. It's been running at 175* and the bellies have seemed to hit a wall at 130* and started backing up. I've done a couple batches before and have notice a stall point at about this...

    Phone call from your HM

Need to look into this option. So far, IFTTT has worked well for me in the tests I've run, but I'd like to have something more reliable based on the feedback here.
