Chicken Tacos - Meatwave Recipe

I read a whole lot of Meatwave.com, but rarely try their recipes. Since I am back into using my kettle and been wanting some chicken tacos, I am trying their take on a Weber's chicken taco recipe. Most the marinade ingredients were at home, but I needed some chicken thighs (I splurged on...

    First Tri Tip

Looks good! Did you cut the tri-tip into pieces? Or it came like that? Nice to see your boy in Scouts, my little man will be joining Cub Scouts as soon as he is old enough.

    NCAA Basketball Tournament....Who'll take it?

I had Mercer over Duke in an office pool. We don't do brackets but everyone picks a random #1 or #2, #3 or #4, etc... This year Mercer was my #13/#14. But then again, I lost Ohio State (my #5/#6).

Thanks for the reply JAk. Like I said, awesome cook. I guess I need to modify my kettle with a lid thermometer. It seems to make a difference.

Marshall Tucker Pork Tenderloins & Chickens

That is an awesome cook-out. A few questions! Did you light up all the coal, or use some sort of minion method? And as for the Stubbs rub, is it any good? I am a big fan of their charcoal.

    RJ Banks....thank you.

That is what I like to use when I go high heat. It is pretty good, just have to break down some of those big chunks, and sometimes the little pieces can be a pain.

    Dogs with the little man

Hearing from people that envy these type of interactions helps in an odd sort of way. Sometimes having "little" kids (I have 3 below the age of 9) can be busy and hard to enjoy. Your comments helps me remember that I need to enjoy this time with them, because it is special and limited.

    Dogs with the little man

Stressful day at work, so I came home to relax, grill with my little man, and hit him some grounders in the backyard. It was a short notice cook-out, so we just grilled up some Hebrew National Beef Franks... My little man helping get the fire going with the "grabbers". [/IMG] Had been...
