    Water pan cleaning

I tried the foiling thing a couple times and, no matter what I did, some grease got under the foil. I gave up and have been using the clean-n-oil method ever since. John

    Water pan cleaning

I don't foil my pan, and here's how I clean it: Note: After the cook I usually have some good coals left (ala the Minion Method). 1) Remove the lid and both grates then top-off the pan with hot water. 2) Open all the bottom vents and let the water come to a boil. 3) Close all the vents and...

    Brisket Questions

I understand the rationale behind the fat acting as a heat shield, but since heat rises won't it be hotter on the top side -- especially if you're on the top rack? John

    Great Spicy Glaze

At the risk of seeming like a Tabasco poster child, they have a new sauce called "Sweet & Spicy" that makes an outstanding chicken glaze. Brush it on straight, or kick it up with a little standard Tabasco for a great hot wing sauce. Just spreadin' the love, John

Recipe: Smoky & Spicy Sour Cream

Tonight I made some lovely quesadillas from some leftover BBQ chicken and I dreamt up this very simple and tasty dippin' sauce for them. It might not be original, but it's damn good. 1/2 c Sour cream 1 T Chipotle Tabasco 1 t Sweet paprika Mix well and dip 'til it's gone. Cheers, John

    Great fire starter

I see quite a few people asking where they can find Weber starter cubes. While I've never used them, I found these beauties at my local Home Depot. They work great and leave no residue whatsoever. Landmann Fire Starter Just FYI, John

    2nd Smokin Salmon

I too picked up a fine wild sockeye filet at my local (Boise) Albertson's (9.99/lb) and whipped-up this recipe. It was a real winner with my girls. There's a picture below. Salmon ------ 1 large Fresh wild (farmed = yuck) salmon filet Your favorite all-purpose/fish/poultry rub Dust the salmon...

    Opinions on a new themometer.

FYI - I see that Overstock has a Maverick ET-7 for $39. I've never used one so I can't comment on it.

    Opinions on a new themometer.

I bought two Taylor 1474 thermometers from Amazon a couple weeks ago. I paid $10 each (reg. $40), but they are $15 now. Here are my impressions/results: Quality - Overall they appear fairly well-made. They aren't all that rugged, but they should be fine if properly cared for. A magnet on the...
