    I like the 2AM start. All the wild animal noises at that time are really fun. Plus, it's not too early to drink beer, because it's really late! :) Figure on a minimum of 12 hours cook time. A remote thermometer lets you get a few hours of sleeping off the beer.

    I'm not sure a charcoal that burns hotter will do any good, if you choke it off by closing the vents. If you want to burn hotter, just open the vents. Even with a full water pan, you'll be over 300 in no time.

    Yeah, I usually start my WSM around 2AM, and I find myself stoking it up again around noon. That's only been for the last decade or so. Not sure when Kingsford went down hill. ;)

    I usually do them on the Performer. Cook to 160, and toss a single small chunk of Pecan on the fire. Only takes an hour or so, cooked indirect.

    Thanks for the input, Bob and Charlie. I don't foil, so I never gave it a thought. I just had someone tell me this week, that they could start a butt at 10 AM, and it would be done by Dinner time. I attributed that to using a stick burner, but foil sounds more likely.     So, this made me wonder. I hear folks saying all the time that they cook a butt in like six or seven hours. How does that happen? At 300 degrees, this experiment still took nine hours.

    I agree 100% I don't see any issue adding unlit during the cook. When I light my Minion cook, it's never more than 20 or so coals.

    I usually rub a butt the night before (around 9 or 10 PM) and I start smoking around 2 AM. So a couple hours here. No need to go any longer than that.
