    Two after-cook questions

Clark, Good idea with the vents. I've been leaving them open. I didn't think of mold. Good point. As far as the ash is concerned, I don't have any woods to use. Steve

    Two after-cook questions

I've had three cooks so far and everything has been great but I have a few questions: 1. After the WSM has cooled down and the cover is placed back on, is it better to leave all dampers closed or open? 2. What do you do with the leftover ash after it cools? I'm usimg K blue charcoal and I...

Question about the color under the dome

Tim, Thanks for the link to the FAQs I should've looked there first. Silly me. Anyway, yes, the color looks about the same but it certainly didn't look like rust to me. And I didn't have to brush it off, it cleared up at the next cook and it looks nice and shiny black now. I'm still thinking...

    ET-73 Gone wild....

Stefan, Agreed, I can always purhase the longer cables Gary, I can live with the temperature difference. I don't mind doing the math. I'm still annoyed that I can't get more than 40ft out of my ET-73. I feel bad that it was a gift and it doesn't work as advertised. Sorry you don't have any...

    ET-73 Gone wild....

Speaking of the ET-73, I just got mine along with my new WSM for father's day and I'm very pleased with the WSM but the ET-73 I'm not too crazy about it. I don't see a long life for my probes either. After two smokes the wires are alreedy starting to look a little worn. My biggest issue with...

Question about the color under the dome

I just got my WSM 22.5 on Fathers day and had my second smoke today. I'm a bit of a clean freak when it comes to my tools, cars and cool toys like the WSM. So naturally I inspected the unit after both smokes. After the first smoke i noticed that the color under the dome was a light brown kinda...

I think the Termometer is off...way off

I know its been aleady mentioned in this thread but here's my expeience as well. I'm new to smoking and today was my second smoke. It was brisket. Came out pretty good but I thought it could have been more tender. Anyway, the 22.5" held steady at 250 on the dome thermometer and my Maverick was...

How many chimney's of K Blue to reach 300.....

OK everyone the results are in. My first longer smoke. The temps held really well. I was surprised. The brisket was ready in about 6 hours and the temp held steady at 250 (dome thermometer) for at least 7 hours. I filled the ring with about 75% unlit K blue and about 75% lit from a Weber...

How many chimney's of K Blue to reach 300.....

Dave, The aluminum door was a little out of shpe but not much. I spent a few minutes bending it and it seems to fit better now. The bowl, middle section and top seem to fit well together so I don't think I have an out of round problem. Tomorrow, Sunday, will be a brisket. We'll see then. Steve

How many chimney's of K Blue to reach 300.....

You guys are losing me a little here. I've only had two smokes so far and both times, with a water pan partially filled, I had trouble keeping the temp under 300. I had the top damper fully open and completely closed two of the three bottom dampaers. I was using one chimney unlit and one...

    How much charcoal?

Thank you all for the great advice. Guess I'm going to learn by trial and error and not rely on the owners manual so much. I've got a pretty good idea for what I need to do from my many hours viewing YouTube videos and the input from you guys and browsing this site. Next smoke will be some...

    How much charcoal?

Hey Grump, Good advice. I've never heard of wicked good briquettes but I know where I can find royal oak. Thanks, Steve

    How much charcoal?

Just got my WSM 22.5 for Fathers day and had my first smoke. I smoked three slabs of baby backs and they came out fantastic. I think I'm going to enjoy this sport(is it a sport?) Anyway, even though the outcome was successful, the process of getting there was a little frustating. The WSM held...

    It's hot...

Funny you asked that question. I'm in Dallas and was home for lunch today when I decided to check on my new WSM the wife and kids got me for Father's day. I was curious about the heat inside. When I removed the cover, the thermometer read just shy of 150! I heard 140 or so is good for jerky...
