    Stuffing for Turkey

Keri, If I am going to follow the recipe for "Basic Cornbread Dressing As I Learned It". Is that something I can make the day before and reheat? I am deep frying turkeys all day long for people on Thanksgiving and am trying to do as much in advance as I can. Also, when cooking your smoked...

Keri C's Apple Juice Brined Turkey

Keri, I am not familiar with "pellets"? I am going to do two turkeys for guests, one deep-fried; the other will be your little gem here. If I was to use Cherry chunks, like baseball size...how many should I use to not over power the bird? And the two chimneys, did you fire those up at the...

    Pork Butt Time Question

OK Bill, is that 225 at the grate? I have a thermometer at the top of the lid, which I have tested and believe to be accurate, and it usually is at 250. I seem to get 6 pound Butts here, and can’t find much bigger. I have yet to hit 2 hours a pound, the longest going about 1 1/2 hours a...

    Halloween ideas???

Larry, the wings were awesome, and every last one was eaten...to rave reviews! The honey seemed to cut the heat in the one batch a little, which was a good thing for some of the folks. And the sesame oil adds a nice subtle flavor. Everyone left full and happy, a good day!

These are too easy, and if you like Blue Cheese, they have always been a crowd pleaser. 1 tube of Pillsbury buttermilk biscuits 1/2 stick of butter 4oz. crumbled blue cheese. Melt blue cheese and butter. Cut each biscuit into ¼’s and coat in the butter/cheese mix. Pace in a square cooking...

    This Weekends Cook

We are starting off with the turkey fryer to make 6 pounds of chicken wings, and then a batch of blue cheese squares from the oven. A game of hearts, then the butts with some slaw and a choice of a couple homemade BBQ sauces. A few choice beverages thrown in here and there, and then we are...

    Pouring rain, smoking wood

Ahhhhhhhh, the smell of smoking wood makes even a pouring morning seem just right. I am cooking up a couple Butts for friends tonight. Made slaw, a couple of sauces, life is good. OK, it might be nicer to take a nap in my hammock as the smell of wood wafts past, but we need these seasonal...

    Placement?

I am cooking up 3 Butts tomorrow. I have one 8 pounder and two 6 pounders. I have to work, so will be starting them at about 5 AM and my son will be taking them the rest of the way. I thought I would put the two 6 pounders on the same rack and the 8 pounder by itself. Will it make much of a...

    Prawn fajitas

I tried out a recipe idea from a friend who had some fajitas while in Vegas. I tossed the prawns with equal amounts white pepper, black pepper, granulated garlic and granulated onion.
