    Crazy WSM

    I had the opposite problem this weekend, it was bizarre. 3/4 ring of unlit charcoal, lit about 20 and put on top minion. Left all vents opened and temp never got over 260 for over 6 hours. I was done with my cook after that so I closed them up. It was weird.

    I just feel I can never get them the right way I like them, medium rare. I guess maybe I just need more practice than compared to my gasser. I typically salt them about 30 minutes before putting them on. Sometimes I add some cracked pepper and maybe a little EVOO.

    Hey everyone, I'm heading to the beach this weekend and I would like to smoke a butt on Saturday during the day and then eat it over the next few days while at the beach. What is the best way to do this? Let it come down to room temp and then put it in the fridge? Then pull later? Thanks
