Brisket? Fat side up or down and why?

I'm a fat side downer, a la Jim Minion, but I foil at 160 like MacPete; otherwise, the brisket plateaus and I'll never reach the finish!

Weber Charcoal Holder - When to use?

There's also the use of the holders as a spacer, to keep charcoal from occupying a space when you dump a chimney. I use one when I'm grilling pizza; just before I place the pizza stone on the grill, I dump the charcoal into the pit and the bin keeps the space clear for the hinged grate. It's...

    Weber Style Knives

I looked into the Weber knives sometime ago. As has been already stated, they are impossible to get in the US; even British dealers who ship stateside will not send the knives, nor the Weber spice grinders, round bread stone, dishes, etc. Of course, I realize Weber solicits vendors to make these...

    Vegetable Holder #3802

I bought four sets too. I like them because you can position them easily and they provide extra heat from the inside, especially for potatoes. I have the Weber Tater ring (also discontinued) when I have a crowd--it's a ring of the same as the vegetable holder but fits on the perimeter of the kettle.

    Weber Banner

I have one. Just keep checking ebay. You should know, however, that the ink begins cracking after a few days in the wind. A bit of a disappointment. Gary

Does anyone know what this is?

I got one about one month ago. It was brand new with a aged box--1970s? I had never seen one before. It works beautifully with all kinds of potatoes and you do not need the cooking grate either: it will sit on the internal clips. Gary

Should I get a WRK? What do you think?

Yes. I love mine and, IMHO, needs better marketing from Weber. While it's true you can feed an army with one, the real genius of the RK is that you can cook over whole logs and have tremendous temperature control that only a wide and deep kettle can provide. I often use it, especially for...

    Pizza on the OTG (pics)

I've gotten very good results from Red Sky's Grilled Pizza Stone for the Weber kettle. Formed as a D, the stone leaves one of the hinged grates unhampered for refueling. I really like it and, if you order through TVWB site, our favorite board gets some support. Gary se it here...

    New Weber add-on

JCullen's right, and I should have clarified. The two lift-up grates for refueling are blocked by the new racks. However, the rack fits nicely inside the kettle dome. The stone, however, works well with making bread and rectangular pizzas. It's convenient to have a platform as most pizza stones...

    New Weber add-on

Weber has a pizza stone that's removable from a stainless rack. The rack resembles the other Weber Style accessories, like the newer rib rack. The whole assembly is just a bit too big to go on to kettle and still lift the end grates.

Anyone own the "Weber Grill Works" rack?

I have one from a True-Value hardware store. It's an all-in-one kind of accessory.

    Wok: Cleaning...

I picked up another Weber wok when I was in one of those outlet superstores for $25, so they are available, but getting scarce. Thanks for the tips on cleaning and on aligning the coals. I always had problems with these. I use the wok mainly for seafood combinations--shrimp or mussels in a...

Anybody know the size of the new Weber Rib Rack?

Lag, Your post made me chuckle. As you can tell from my arsenal of Webers, I'm fully ready for all grilling and smoking, but then again, the pants would be a good complement! Gary P. S. Have you seen the Weber Utility Shirt? I guess I'm getting off track!

    Webernation Grilling Classes

Jamie, I love all the videos, but the longer ones are the most valuable. There is just something not only magical, but instructive, about seeing you do the prep for a specific recipe. We're all enthusiasts here, willing to log on to the WeberNation site and navigate to the grilling class...

    Prep area

Jamie, I have some vague questions and expect only subjective answers. Do you have any advice for what is the best environment for prep in barbecue and grilling? I know much comes down to personal preference, but how would a trained chef like you approach prep for barbecue? For instance, do...

Anybody know the size of the new Weber Rib Rack?

Where. O where, did that fellow get the Weber pants? Gary

    New Rubs from Weber

Wow, that didn't take long, but I suspected such when the BBQ Rub ran out at my local Sam's and was not replenished. I bought about 10 cans of the Weber spray at Big Lots just a few weeks ago--$1.50 each! Gary

    New Sidetable

I have the work table--which has been available for about one year--and I love it with my OTG 22 1/2. I have them placed next to my Ranch Kettle so I use it double duty. Gary

    New Rubs from Weber

Thanks, Chris and George. We do not have a Super Wal-Mart because of reasons similar to the ones George cites. I tried two Super Wal-Marts in my travels--one I've visited several times in the past--and they seem to have the same Weber seasonings that they had on the shelf last year! And no...

    New Rubs from Weber

Other than the four older marinades and the new rubs--both at Sam's--I haven't been able to find any of the new Weber marinades or seasonings, either here in the East or in Ohio. I saw a press release for some of them on the web, but "Southern Whiskey" was not one of them. Gary
