pizza on OTS the bane of my existence

Sandy, I have the Kettle Pizza, cook indirect and I do reach temps upwards of 800 degrees. With that being said, those temps are impossible to reach with charcoal alone. I use a full chimney of charcoal but also add 2 or 3 pieces of oak depending on their size. Once those pieces get going and...

    Pizza again

Nate, Pizza looks great! That is a great book and the New York recipe is my go to recipe. I can't recommend this book enough. If you like to make pizza it's worth every penny. I cook my pizza in the Kettle Pizza and have had great success. With a 12oz ball I can usually get a 10-11 inch pizza...

    New, to me, Performer

Thanks everyone for the kind words. I am very happy with this purchase and amazed people sell these for so cheap. I know everyone has their reasons, but these Weber's clean up with so little effort I can't imagine ever wanting to sell it. Troy, the guy you bought yours from is going to be...

    I can't believe I'm asking this...

A few months ago I wouldn't of even thought about this, but reading this site has me wanting to take care of/respect my Weber's a whole lot more, so here goes. Does anybody clean their covers? if so, what do you use? or do you just get a new one when its time? My covers are still in good...

OTS being sent to the minor leagues

I started this cook off like any other, standing in front of the fridge, trying to figure out what sounded good for dinner. After a beer or two I settled on some leg quarters and a breast for the wife. I whipped up a quick marinade, threw the chicken in a bowl and set off to start the coals. As...

    New, to me, Performer

Today is a very happy day for me. I've been scouring Craigslist for months looking for a Performer. After being as patient as I could be, one finally popped up. The ad said lightly used Weber $50. When I opened the ad, there was a picture of a newer Performer. I couldn't believe my eyes. The...

    Pizzas and Cinnamon Twists

The pizzas look great. I used to use corn meal on my peel but the kids take too long to put the toppings on their pizzas. The moisture from the dough would absorb the corn meal and the dough would stick to the peel. I now use semolina flour which works better but the the real trick for me, is...

    Hello from Northern California

I've been using a Weber Charcoal Kettle since I was a little kid. My dad taught me how to grill on it and I've used one ever since. I just recently built a Mini-WSM and love it and I have owned a Genesis Gold C for about 10 years now. I look forward to learning and sharing what I've learned.
