    Outdoor Wok Burner

Mike... Between my sons and I we have 4 propane burners from turkey fryers. As you mentioned most are on the low side, however one of ours is higher. We purchased them years ago and I can't recall the brand. One other suggestion is a 1 or 2 burner propane camp stove that is a comfortable...

    rotisserie a whole lamb

As Dave sez... shop on Ebay or salvage yards for the gear reduction. I recommend a worm gear drive since it is more efficient, doesn't speed up or drag during rotation. I used a pulley on the driver motor and one on the gear reducer to get a 3-1/2 to 4 rpm. I built my first one here in WA for...

    rotisserie a whole lamb

The heat over the coals isn't hot enough to deteriorate the galvanized finish on the pipe. The galvanized finish is destroyed by burning with the high heat generated by a welder's torch.

    rotisserie a whole lamb

Aloha... you either build one yourself w/ salvaged components for a mechanized one or build a human powered one. A lamb is not that heavy so build one with a length of galvanized pipe and attach a salvaged steering wheel at one end to turn. You can always find a volunteer to take turns "at the...

    hawaiian sea salt ??

Shaun... I looked in the chicken recipe section of this forum and noticed a number of "huli-huli" style chicken, many with multiple ingredients. For personal taste I use Hawaiian salt and black pepper only, like my mom taught me 60 years ago. I also use it when I grill or smoke meat; subbing...

    hawaiian sea salt ??

Hawaiian sea salt is not a "boutique" salt because it is more expensive here on the mainland. It has been used for decades upon decades upon decades by Hawaiians and other Polynesians as a seasoning agent for that matter. It has different characteristics from sea salts from different oceans...

    hawaiian sea salt ??

Aloha Glenn, I use Hawaiian sea salt in most of my cooking, especially grilling and bbq. I was born and raised in Hawaii and used to harvest for our own use along the rocky coast line where seawater was trapped in rock pockets and indentations and mother nature dried it out. The red sea salt...

    22.5 WSM height measurements favor

Aloha Josh... I had the same idea about a year ago on my 22.5 WSM. I acquired an extra middle section complete with racks and cover on CL. It would work but it would entail more mods to the platinum than I cared to do and cleaning out the WSM bowl became an issue. The mod would look nice and...

    hickory versus maple

Here in the Pacific Northwest I use maple, apple and alder since they are readily available for the hauling. Haven't used hickory since I am too cheap to buy some.

    Smoking fish

Hi... I use mostly maple and alder to smoke salmon. Apple or any fruitwood works too. Mesquite is a bit "strong" for fish but I use it for pork and beef. Good luck... joe

    Rotisserie Fuel

The placement and amount the heat really depends on what you are rotissing. When I rotiss a whole hog most of the heat is at the shoulders and at the hind quarters. Bank your heat accordingly. Good luck... joe

    Dry Aged Filet Ideas?

Aloha Jon...The pinkish colored Hawaiian sea salt is called ALAE. I grilled 20 pounds if boneless/skinless chicken thighs and 25 lbs of flank steak for a PTSD benefit last night and the only seasonings were alae and fresh ground pepper... It was a hit. joe

    Luau party menu

Aloha Kevin... Looks like you got the menu! For the PP, I would just season with sea salt only... then after pulling, lightly sprinkle more sea salt for a more traditional flavor. You can use canned salmon for the lomi but as George mentioned it isn't the same. I think smoked salmon would...
