Low and Slow with Kingsford Competition?

Hello there, Has anyone had success with using Kingsford Competition briquets for a Low and Slow (15+ hours) smoking session? My plan is to use the Minion Method, with a full water pan. I anticipate that I would need to keep the lower vents on the WSM mostly closed. Thanks,

More time for more meat? Midnight brisket

Hello there, Continuation of a post below. Soon I'll be smoking three briskets, over 40 pounds, overnight in my WSM 22.5." Low and slow, with hot water in the pan. Will this take longer than one brisket? Thanks,

    advice for 3 briskets -- 40+ pounds -- at once on 22.5

John, With one 15-pounder I did a midnight brisket, keeping a good low and slow under 250, for over 12 hours, in the 18.5. I had a full water pan (hot water). With my three 15-pounders (in two weeks) I'm planning to do 12 - 15 hours, with a full water pan, at 225 - 250 degrees. Also, I'm...

    advice for 3 briskets -- 40+ pounds -- at once on 22.5

With so much meat, do I have to increase the time of the low and slow cook? I'm inclined to think that the answer is "no," but would like to know from the masters.

    advice for 3 briskets -- 40+ pounds -- at once on 22.5

Hello Everyone, Thanks for all the replies and discussion. I'm a big fan of using a full water pan for the low and slow smokes. In my experience the top of the smoker does get the hottest, so that's were I'll put my temperature probe. I'm getting pretty excited. I got two of the 15 pounders...

    advice for 3 briskets -- 40+ pounds -- at once on 22.5

Gotcha. That makes sense, so I won't have to move things around while cooking. Did you have three temp gauges?

    advice for 3 briskets -- 40+ pounds -- at once on 22.5

Hello there, In a few weeks I'm doing a lot of midnight brisket, over 40 pounds, on my new WSM 22.5. I know that I have to put in a third grate. Any good suggestions? I did a great midnight brisket last year on my 18.5, but I have since upgraded -- and got more friends... One specific...

    Midnight brisket

In three weeks I'm doing a midnight brisket on the 22.5. Probably 40 pounds of brisket. Last summer I did a 14 pounder on the 18.5. Here are my notes from that success: ====== I got a fourteen pound, whole brisket, with good fat cap. 1) Trimmed some of the fat -- probably not enough...

Success -- Beer can chicken, rib roast, chuck roast all at once on the 22.5

Hello there, I'm posting this for my own records, but it might interest people on this board. I just moved up from the 18.5 to the 22.5. In a few weeks I'm smoking 40 pounds of brisket, and wanted to test the 22.5 this weekend with a challenge of three different things at once: 1) 4 pound...

Three different meats at once -- advice

Hello there, Tomorrow I'm smoking three different things on my WSM 22.5 for a little dinner party: 1) Standing rib roast, 3 bones. 2) Chuck eye roast, 4 pounds 3) 4.5 pound chicken I want to do all of these on the WSM 22.5 at once. I'm thinking of putting all three on the same grate, and...

    Anyone ever regret the 22.5?

I just got the 22.5 because my 18.5 was too small. Last summer I had about 20 people over for a midnight brisket smoked on the 18.5. So many people heard about it, that this summer we are doing it again for over 40 people. I got the 22.5 last night. It's beautiful. First test smoke coming...
