    Pastrami: Question about Corning

I am corning a brisket flat right now using the dry method (w/tender quick) on this website so I can make Pastrami. I have had it in my fridge for 3 days now. There is NOT a lot of liquid pooling in the bag. Is that ok? I was imagining that there would be more liquid -- like the Corned Beef...

    Sugar in beef rubs?

I tried sugar once on beef ribs and I didn't like it. I now basically use the same rub that I put on briskets -- no sugar. You can sweeten them up if you want to by saucing them at the end. Paul

I need some advice on beef ribs.

They are like cooking pork ribs more or less, just bigger. I love them! I found a butcher here in Minneapolis that sells them cheap -- whole slabs in cryovac. Look at them closely though because some slabs have more meat on them than others. Here is what I do differently from pork ribs: -...

    roast beef for sandwiches

I like eye of round as well because it is generally uniform in shape (cylindrical) so it all gets done at the same time. And it has a good "beefy" taste.

I think that if you steam it instead of microwaving it that it stays moister. After it has thawed of course.

    Disgruntled neighbors

Pretty much every time I BBQ, I cook a little extra so I can pay my neighbor's their Smoke Tax. I live in a house, but we are all packed pretty close together. I like getting another opinion on how my experiments turn out too.

    Twin Cities BBQ accessories?

I got my WSM at Ace Hardware several years ago. I showed them Amazon's price and they matched it. Why not just order your BBQ accessories over the Internet? There are lots of good sites out there with anything you could possibly want and it will probably cost less that buying from a retail...

Minneapolis - Where to find Lump

The Menards in Richfield (494 and Nicollet) carries it. I was there yesterday and they had a large display right next to the checkout. Paul P.S. I will try not to hold your living in Edina against you. ;-)

Minneapolis - Where to find Lump

Patrick, While I have never gone to this place, I have heard they can supply all your charcoal and wood needs. It is called Northwest Charcoal and Chemical. Their phone number is (612) 879-8044. Their address is 2900 17th Ave. S #1, Minneapolis, MN 55407. I don't know what brands they carry...
