Weber Remote Probe

Ive got a weber probe, ET 73 and a complete nu-temp setup. I love the weber probe, keep in mind the temps they tell you to cook too are really high, you cook a steak to 135 (weber says rare) you will hardly have any pink in there(rare is like 120). Also dont cook a bird to 180 like it says...

    Weber Flame

That thing is sweet! I wonder how hard it would be to convert to natural gas....then it would be especially nice.

What puts a bbq over the edge?

I think that really cold beer can make the BBQ. Every BBQ off the bullet that isnt "great" will beat famous daves any day. Only "bad" bbq I have had is resturant BBQ. (your results may vary the further south you travel)

Insulating with Hot Water Heater blanket

Insulating with Hot Water Heater blanket

The water heater wraps are great. This winter I have used my bullet in temps as cold as -20F and it helps a ton. I do find if the temps are warm, like 30s or so the cooker can run a bit warm. I would guestimate it uses 25% less fuel with the wrap on.

    First WSM Cook...complete disaster

I am and always have been of the opinion that for the first cook you need to do the biggest pork butt you can find. It is hard to screw it up, doesnt mind if the temps get wacky for a while, best reason is it really seasons the cooker. Dont sell a cooker after one use, give it another go, get...

First Smoke Today ... BB Ribs

I have left my ribs in rub overnight and have not had a hammy taste. I use a britu rub but I only use 1/2 the salt it calls for. Always fresh ribs, never used enhanced. As far as woods I use one fist sized chunk of hickory and a chunk of apple or cherry. If the ribs are just for me I will...

Pork Butt.... Is over 250 degrees bad?

I wouldnt worry, Alot of stickburners use 250 as their optimum temp and their betts seem to come out ok. I agree that when you start it you really only need 10-20 briquets. I used 16 and had no problem in zero weather. A pitminder helps that but you should be fine with 20-30 without one. Let...

    Cleaning The WSM

Dont do this Dont do what I did for sure. I would not consider cleaning mine ever again. Every once in a while I put the grates in my self cleaning oven but that is it. I have found that grease is a good thing for your cooker, makes it airtight. Wear your grime with pride, you have earned it.

WSM vs. egg cooker (grill dome here)

I guess convection would explain it. I will just tell people my pit minder is a convection blower for the WSM.....

WSM vs. egg cooker (grill dome here)

All that being said his question is a good one. 225 degrees is 225 degrees no matter how much fuel is burned or how efficient the radient heat is. I would summise your neighbor may be unknowingly cooking a bit higher than 225 or you are colder that that. Temps that are equal and meat that is...

    Anyone BBQ under an EZ-Up?

It was about 5 degrees with a 15+ knot wind. I have had no problems what so ever with the blanket sticking or even looking like it may stick. I believe in order to say it is fire resistant up to 700 degrees the weakest link must be up to the 700 degree task. Also the smoke was 21 hours and...

accidentally cooked a good prime rib on the WSM

I did a goof this weekend too. I couldnt get my cooker over 220 degrees, I turned the pitminder up to 350 and still nothing. Turns out my homemade smoking jacket closed the damper on the 4cfm fan. What do ya know opened it up and the temps moved freely again.

    Anyone BBQ under an EZ-Up?

The gate is to keep the dogs from getting the noses burned. My neighbors love it in the summer when I cover the 22" platinum in fresh corn on the cob, the 18" platinum in chicken and ribs on the smoker. It really smells good. Sorry you dont care for knob creek I feel it is a decent drink, and...

    Anyone BBQ under an EZ-Up?

Since this will be on my deck I am going to just screw the corners down......Or use cinder blocks, haven't decided. Will be a nice change since it is raining. Setuping in the rain is not the coolest.

    Anyone BBQ under an EZ-Up?

Supposed to be freezing drizzle, snow and all sorts of unplesantrys for new years. Planning on setting up my new EZ-Up (think you santa) and cooking under it. I am only going to attach 3 of the 4 sides to keep some ventilation and block the wind at the same time. Any thoughts or concerns with...

    Butts... does it matter...

quote:
Would the holes in the butts be a problem?

Seriously, I wouldnt think it would be an issue at all. People use squers all the time for ribs and have no problems. A rack to fit more pork would be a great...
