    Stocks, broths, demi-glaces...Help!

Could someone please lay out a straight forward definition of stocks and broths? And what exactly is a demi-glace? I have looked online but I get bunches of different answers. I am wanting to make homemade chicken stock at home as well, so any recipes (are there different recipes?) would be...

    Grilling for Anniversary Party

Thanks for all the tips. I gotta try that tomato watermelon soup before those two go out of season. That meal looks awesome and also thanks for your kind words. I am still in amazement that you can cook a brisket in 4.5 hours and it come out good. Innovative as well as convenient.

    Grilling for Anniversary Party

Well, the party is over, I am stuffed and everybody seemed to like it. I wanted to give an update since so many of you did a lot to help me out. In an honest and critical review, I would give the whole thing a 4.5/10. The shrimp appetizers went over very well. Didn't get people to the table...

    Grilling for Anniversary Party

Another question. I wanted to make those brandied mushrooms but I don't have access to brandy. (none on hand and budget doesn't cover it) Could they be made without it or is there something else that could be substituted?

    Grilling for Anniversary Party

Ok quick question. The only left up in the air is the salad. I have some great tomatoes I got from my boss out of his garden and I was requested to grill some peppers and onions so I was hoping to make that all into a salad. What dressing, what else to put in? When you say a light vinegar...

    Grilling for Anniversary Party

Man those soups look good! That chilled cucumber looks like it might be what I'm looking for. Another question, should I have some kind of sauce with the grilled shrimp? I just plan on serving them like Kevin said, 2-3 to a skewer and passed around. And I am open to any new/creative...

    Grilling for Anniversary Party

Wow! Thanks guys. I knew yall would come through with some great ideas. Kevin, I agree completely with what Steve said. You certainly do seem to be an artist with food entertaining. As far as the gazpacho, sounds great but I don't have access to any of those herbs. Looked for them in my...

    Grilling for Anniversary Party

Sorry for the loss of info. I had typed more but my wife accidentally deleted it and there was some lost stuff in the retyping. Thom H., There are going to be 20 people, 17 adults. The 3 kids will probably demand to go to McDonald's so we don't really have to worry about them. As far as...

    Grilling for Anniversary Party

This Friday, August 25, my wife and I have been asked to grill for her grandparents' 50th wedding anniversary. The only request I have is for the main course to be steak and shrimp. I haven't found a decent butcher shop in my area so I plan on buying Choice Strip Steaks at Sam's. I have tried...

    Keri's Hog-Apple Baked Beans

I made these beans for Mother's Day along with a low country boil and they were incredible. I gotta give you props Keri because I don't even like baked beans and you won me over. I liked em so much I even brought them for work today. Thanks for the recipe.

    Low Country Boil Recipe Request

Well, the boil went really well. I really wanted to try to make the stock like Kevin talked about, but with church and a 9 month old, sometimes time can get cut short. So in the end we just used about 8 quarts of water and a bag of Zatarain's Crab Boil. Put the potatoes and sausage in for...

    Low Country Boil Recipe Request

Thanks Rita. Something that simple is exactly what I wanted to hear. Kevin, I'll give it a try. I love anything that can give me more stuff to play with. Anyway, I'll report back on how it tasted.

One more question. Is there a brand of cocktail sauce that is good? I am not against making it but if there is a commercial that is good I would use it. Thanks.

    Low Country Boil Recipe Request

Thanks for the tips guys. Right now I've got 7 ears of fresh corn, 3 lbs of sausage, 7 lbs of potatoes to cook and now I've got to get the seafood. Man the prices of seafood hurts. I was hoping to get some crab but it is 10.88 a lb. Haven't decided what size shrimp yet. Thinking 30-40...

Shawn, What kind of potatoes do you use? I have tried boiling just red potatoes and wasn't too impressed. Is that what you have used?

    Low Country Boil Recipe Request

While this is not a smoking question, it is outdoor cooking so it's still fun. Does anyone have any recipes for this? All I have is a recipe I got out of the paper. I hope I got the name right because my family has always called this a throwdown but the paper said a low country boil. It is...

    Can't Decide

I'll be one more voice for the kettle. I have had my 22 1/2 Platinum for 2 years and have really pleased with it. I have smoked on it, indirect grilled on it, and the amount of heat you can get out of it for a quick sear is really great. And for only 180 bucks to boot.
