    Jay If you brine it the cooking time will be reduced, because the brine will make it cook faster. Put the turkey in a turkey roasting bag with the brine. Place in a 5 gal white bucket and pack it with ice.

    Living in the Chicagoland area I can tell you rib tips are almost as popular as ribs. You can buy packages of just rib tips in the grocery stores. You need a meat cleaver to chop them up when your done smoking them. They are a little messier to eat than ribs, but I love them.

    Baking Pans

    Dennis D When I do baked beans I use 2 foil pans put together. This makes it stronger. If I use a baking cassrole I wrap the outside and the lip of the dish with foil. This keeps if from staining.

    Injecting marinade in pork butt?

    I injected once and I don't know if I over did it, but it was to mushy for me. I like just putting a rub on it and after I pull it I mix in a bbq sauce. I'm happy with these results. Whatever works for you go for it. If everybody liked the same think, it would be a dull world.

    Where to buy wood chunks

    Try your local nursery. They usually carry wood for fireplaces and fire pits. I found hickory, cherry, apple, and oak split logs dried out. They give off a nice smell in fire pits and are great in your WSM.
