    Water or other liquid in the pan?

    Definitely use the pan to create indirect cooking but with no water or liquid in the pan....then two chimneys full of lit to get the temp up to 325-350 for the cook.

    Just three Beer Can Chix today. One with bbq rub, one with a cranberry glaze and cranberry salsa on side, and one with an asian marinade and a peanut sauce on side. All smoked with a few chunks of apple wood.

    agree with Paul..empty water pan with two chimney of lit to and open vents all the way trying to keep around 350. Then just temp for done 160 breast 170 thigh.
