Why can't we just call it all barbecue?

I call it Wake and Bacon

    Smoke Wood

I went into a woodworking shop to see if they had any rough cut ends of some plain jane untreated maple or oak I could scoop up, and the woman who started helping me had a horrified look in her eyes when i told her I wanted scrap hardwood to burn. Not because I was subverting her hobby- she said...

    Performer for $175?

If I buy it I might need to bring a screwdriver and separate the kettle and the work surface. No garage or shed available, but I do have a spot that would work under the eaves where it'd fit. Got any tips on navigating the marital strife of trying to buy more than one grill?

    Performer for $175?

Does anyone know about what the dimensions are on this with the table folded down? I'm now not 100% sure I can fit this into my car when it's assembled.

    When to add meat/start timing?

Unless you have every vent wide open, you probably have the wiggle room to adjust the airflow and raise the temperature. As you keep cooking on it you'll learn how your WSM settles in, but if the temperature's not where you want it you have ways to increase or decrease the temp using the air...

Why can't we just call it all barbecue?

I love the Amazing Ribs articles on Barbecue and the etymology of the word. https://amazingribs.com/barbecue-history-and-culture/barbecue-history https://amazingribs.com/barbecue-history-and-culture/what-barbecue We've called inviting people over for stuff on the grill a cookout my whole...

    Performer for $175?

https://offerup.com/item/detail/701585889/ More experienced hands, is this a grill worth $150-175? I don't have a ton of space so the small collapsible table is a plus for me, and the lid cradle as well. Are there negatives to the performer series the kettles don't have? Bonus: if I buy it...

    Can't Beat Free

https://www.facebook.com/marketplace/item/467823400702893/ Don't know if there's anyone in my neck of the woods, but even if I was looking I'm sure I'd be shanghai'd for getting ANOTHER grill (please don't say anything to my family about the charcoal grill I'm bidding on).

    Free 18" Weber WSM

I asked and they would like it! Problem is it’s just far enough away we can’t just make the drive impromptu. We’re trying to figure out when one of us might be able to make it down there. If someone else can make it before us, they should have it and thanks for the incredibly generous offer.

Pork Butt Prep the Night Before?

Salting meat in advance of cooking it causes actual physical changes to the muscle fibers. At some point along the timeline you'll notice the difference vs salting it a few minutes before you throw it on. Depending on how big your shoulder is and how much salt and how much time, it may not make...

    Free 18" Weber WSM

Had a friend last week say "I'm gonna buy a smoker and bug you for tips". I'll check if they were serious, we're only about 2 hours from Alexandria.

    Royal Oak Wood Chunks

Does anyone have any experience using Royal Oak wood chunks? I'd still prefer to find a local source for wood chunks (harder than I thought), but the restaurant store near me has a case of six 5.5lb bags for under $30. I'm sure there's nothing terrible about them but it'd also be nice to get a...

Father's Day Gift: New Smoker! (First Smoker EVER! Now what do I do...?)

Thanks, I learned something today. (the cooking spray, not the fire safety)

Father's Day Gift: New Smoker! (First Smoker EVER! Now what do I do...?)

Welcome! I just started using a WSM, and while it feels overwhelming and there are many things I'd recommend the only things you absolutely need to get started and do the dang thing when you're ready are a bag of charcoal, something to cook, a way to get it on and off the smoker, and time and...

    I think this should work

It looks like you've got it in a good place, but just be careful you don't let the probe wander and touch the fire box, lid, etc. They can read up to really high air temps no problem, but you run the risk of throwing it off or ruining it if it's sitting on a 600' side wall.

    Smoker vs. Oven

The way an ATC works to hold a temperature is by being the only intake on the cooker, and that way they control introducing or restricting oxygen as needed. That's why some of them come with heat-resistant tape on a WSM kit. You need to have the vent the ATC is connected to fully open, but the...

Spirit II E-310 or Genesis II E-210

I've been extremely happy with my Spirit 3 burner so far. "Splurging" is 60% more. If you're set on $500 as your price point you're getting relatively equal pieces of hardware (virtually the same cooking space) from the same company, get 3 burners instead of 2.

Do you use a Food Saver ?

Anyone have experience with Geryon? I've been trying to convince the other half that a vaccuum sealer would actually be an addition to the kitchen and not a nuisance, and these seem well reviewed and in the right budget range. If not, anything in general for vaccuum sealers I should avoid...

    Pulled Pork from Small Butts

Cooked both boneless butts out of a Costco package that had a total weight of about 11lb before trimming last week on the 18.5". After trim and tie, one was done in about 7 hours (about 4 to take it to 160 and then wrap) and one took a little longer. Sounds pretty close to the size you're...
